WOW! Last week's newsletter was surely a hit. I've received stacks of e-mails asking for more immunity boosting tips and also where I get my Astragalus. My own personal favorite is also the one recommended by Dr. Andrew Weil. In fact, he is where I first heard of it. Herbalfortress is an on-line supplier owned by a friend of mine, Dr. Margo Parker. She takes great care in creating all of her herbals and I highly recommend them.

 

I've included a recipe this week that will help boost your immune system. We all know that taking extra Vitamin C is a good idea during cold and flu season and there are many fabulous foods like today's recipe that add extra C. 

Many doctors in China also suggest drinking green tea for the polyphenols, potent plant antioxidants. Scientists are studying a particular group of polyphenols in green tea called catechins which may kill influenza viruses. Although just how they work isn't fully known, research suggests that catechins may stimulate production and activity of some immune cells and inhibit the production of disease promoting inflammatory compounds. I love green tea, but if your idea of green tea is some tasteless generic green tea from the local chinese take out, think again! Try one of the fabulous green teas from the Harney Tea Co. Most people brew green tea too long, with water that is too hot. To maximize benefits and flavor, Harney  recommends using less-than-boiling water and steeping green tea for no more than three minutes. A little lemon and/or honey might be ok, although John Harney would shudder at that thought! I also prefer green tea with nothing added and I'll be happy to make some recommendations for you if you contact me. So enjoy a cup of green tea with your couscous (recipe below) and stay healthy!

  Couscous Pilaf  

I took an old Rice Pilaf recipe and made it with couscous instead - delish!

 

1 tablespoon extra-virgin olive oil

1 large head of finely chopped cauliflower  

1/2 teaspoon salt

3/4 cup home-made or reduced-sodium chicken broth

1 teaspoon freshly grated orange zest

1/4 cup orange juice

1/4 cup currants

2/3 cup whole-wheat couscous

1/2 cup sliced leaks

Heat oil in a large saucepan over medium heat. Add cauliflower and salt; cook, stirring, until softened, about 3 minutes. Add broth, orange zest, juice and currants; bring to a boil over high heat. Stir in couscous and leaks. Remove from heat and let stand, covered, until the liquid is absorbed, about 5 min. This yummy dish has only 163 calories per serving and a whopping 78% of our daily value of vitamin C. Enjoy!
