As I was walking yesterday and getting my dose of the "Sunshine Vitamin," I saw my life flash before my eyes - well, ok, not really, I just got terribly frightened by a fierce looking dog that charged out into the road after me with teeth barred and growling! A mere second before the dog leaped at me, his owner was able to restrain him. I had a foot ready to kick as he leaped, but, thankfully it was unnecessary. What, I'd like to know, is a ferocious dog like that doing walking around free? There is a leash law in my town and during the years that my children were growing up, we owned dogs too, but they were always either tied in the yard, or fenced in. We took 100% responsibility for the care of our pets. Sure, once in a while someone would open the door and the dog would run out of the house before you could blink, these things happen, but we'd get them right back. The other part of taking responsibility for your pets is making sure that if you live in a neighborhood, you do not have a dog that may attack someone walking by, or the little girl selling her girl scout cookies, etc.
This then made me think about other areas of my life. Some are easier to take 100% responsibility for than others. For instance, I still have not figured out the best way to keep up my workouts when I travel. I travel often so this is a big one. I'm not a spring chicken as it were, and even though I feel very strongly that I need to exercise every day, occasionally I miss my daily routine. So, no more excuses, Kathi! I am making a commitment to myself to get up a little earlier when traveling so that I don't miss any valuable muscle building! I'm also committing to research more short workouts so that I can fit them in on the road. Of course, I'll share my findings with you all.
Think about your own life this week and find an area that you need to re-commit to, and go for it! Spring is here - let's all do some mental or spiritual housecleaning.

Kale and Magic Dressing!

Kale is definitely up there with the mightiest of vegetables, in fact, it may be the top of the pile. One cup provides over a thousand percent of the Daily Value for vitamin K, 192% of vitamin A and 88 % of vitamin C.

But I didn't grow up eating Kale. Even though we grew many of our own vegetables, Kale just wasn't one of them. I'd never even heard of Kale until well into my adult life and the first time I tried it, I didn't care for it.

In recent years I have been searching out good recipes for Kale, since it's so nutrient rich, and today I'll share my favorite. This Kale Salad is very popular at my friend Michelle's dinner table and, believe it or not, it's a raw dish. The key to this dish, according to Michelle is to make it at least a half hour ahead of time and let it sit in the dressing. That's how the Kale becomes soft - raw Kale is a bit too crunchy for most people. I think it's her dressing which makes the Kale unbelievably delicious - that's the magic! Here's the recipe:

  • 1/2 cup extra virgin olive oil
  • 1/8 cup balsamic vinegar
  • 2 Tbsp. soy sauce 
  • 1 tsp. crushed garlic
  • 1 Tbsp. maple syrup
  • Handful of crushed walnuts
  • Grated Pecorino cheese (optional)

Mix the dressing together and shake well.

Clean a big bunch of Kale and strip out the center stalks.

Then cut it up, toss with the dressing and let it sit for 30 minutes. When you're ready to eat, toss in the walnuts and add salt and pepper to taste. You can sprinkle the Pecorino on just before serving if you'd like. Experiment with this yummy tasting salad and your body will thank you!
