Easy, Healthy Appetizer

Sesame Carrots  

 

1 large bag of baby carrots 

1 cup sesame seeds 

1 tbsp olive oil  

1 tsp. coarse salt (like Kosher) 

 

Heat a large fry pan on high until the pan is very hot and then pour the sesame seeds, coating the bottom of the pan. Keep stirring as they brown very quickly and remove from the heat as soon as they turn golden brown. Pour the seeds into a shallow bowl with the coarse salt and set aside.

 

Brush a thin coating of the olive oil onto each carrot  and then roll it in the seed and salt mixture until the carrot is coated. Stand the carrots in a small bowl for effect. They look lovely, are good for you, and taste yummy too!

Have a Thankful, Loving Holiday!     

This is the start of the Holiday season for me and my family. For many years we all enjoyed fabulous Thanksgiving dinners at my sister's home in Virginia. I rarely get to Virginia at Thanksgiving anymore, but to this day, we both continue a custom that she started way back then. The day after Thanksgiving, I take all the Christmas decorations down from the attic, set up the tree, and take the first of the seasons Christmas photos! I know that sounds a bit much, but every year my sister and I think of each other, call each other up to see who finished decorating first, and we enjoy a hot toddy while we're talking on the phone and reminiscing of holidays when our parents were still celebrating with us...  

The Thanksgiving table looks more like a grocery store display in most homes - with more food than any one family could possibly eat! Thank goodness it's only once a year.

Let's start some new traditions this year and replace just one high fat item with something different. Fruit & Veggie Plates are becoming more popular - try sprucing your platter up with a little spicy hummus for dipping instead of a creamy dip, or a vegetable that's not usually on the raw platter like shitake mushrooms instead of buttons; strawberries and pear slices that are dipped in dark chocolate look very festive - let your imagination go wild! 

I have included an easy recipe for a fun appetizer, as well as a book recommendation and some fun tips on how to "fit" fitness into your Thanksgiving weekend, along with the turkey, pumpkin pie and football! Enjoy!

Tips For Fitting In Fitness With Your NFL Football!      

  • How about a family football game of your own? My family has played touch football on several Thanksgivings over the years, and we end up laughing our heads off as well as working off some of those potatoes and stuffing!
  • If football is a little too rough for you, consider a brisk walk or hike through the mountains. You can collect pretty colored leaves and then keep the kids busy putting them together in a collage when you get back!
  • Start your own competition with a family bike ride for your favorite charity. The winning team gets to choose the charity and the losing team makes a donation of time or money. There are many worthy charities that need the extra help during this time of year.
  • A push-up competition during the commercial breaks can be loads of fun and push-ups are great exercise - a "twofer"! You can modify them for everyone in the family - even great grandma can do a wall push-up! See which family member can do the most push-ups during commercials.  

Let your creativity loose and see what happens. I think I'll challenge my son to push-ups this year!
