Fun Fall Recipe

Yummy Butternut Squash

Cut the squash in half and remove the seeds. 

In the hollow where the seeds were removed, place a pat of butter and 1/2 tsp. of maple syrup.  

Brush a little of the maple syrup on the rest of the inside of each half.  

Sprinkle the great anti-inflammatory spice, Cinnamon, on the whole inside. 

Place each half in a shallow baking dish and add a tiny bit of water to the pan. 

Cover with foil and bake at 350 degrees for 40 minutes or until the squash is soft.


DELICIOUS!

I spent last Sunday at a farm picking pumpkins, enjoying the fall scenery, and drinking lovely hot spiced cider! It was a great day and it made me think of great fall recipes. We picked up a butternut squash larger than my neighbor's dog and I'm looking forward to cooking it up tonight! Today's recipe is one of my fall favorites and you can substitute acorn or another winter squash if you'd like.

Tip of The Week - Healthy Snacks 

 

I travel often, and like many of my fellow travelers, I find it difficult to get enough healthy food on the road. I am one of those who MUST eat every three to four hours. Here are my fav's for packing and taking along no matter where I go:
  • Sliced apples with almond butter in a small re-usable container that fit's easily into my purse.
  • Sea Crunchies - these are baked seaweed that is a much healthier alternative to potato chips.
  • Sliced carrots or celery with hummus - yummmmmm!
  • Make your own trail mix with black currants, almonds, and any other dried fruit or nut that you like - no candy!
  • Shakeology chocolate is a great drink to pack - I make it up and keep it in the cooler to eat later. It fills me up and I don't need anything else for several hours!
      **This is also something I take along when providing a long workshop. If there isn't time to eat lunch, I drink a Shakeology shake and it fills me up without that bloated sensation so that I can demonstrate exercises without any discomfort! 
  • Edamame is an easy, tasty, and healthy treat
  • Sesame seed carrots are a delicious snack - simply brush a little sesame oil on the carrots, roll them in the seeds and pack!
  • Fall is pumpkin season so clean and dry some of the seeds by baking them for 30 minutes. Then you can toss them with a little olive oil and sprinkle with  cinnamon, or with Pecorino-Romano cheese. Bake about 20 more minutes. 

Tuesday Tickling of Your Funny Bone!

Several years ago, Andy was sentenced to prison. During his stay, he got along well with the guards and all his fellow inmates. The warden saw that deep down, Andy was a good person and made arrangements for Andy to learn a trade while doing his time. After 3 years, Andy was recognized as one of the best carpenters in the local area. Often he would be given a weekend pass to do odd jobs for the citizens of the community and he always reported back to prison by Sunday evening.

The warden was thinking of remodeling his kitchen and in fact had done much of the work himself. But he lacked the skills to build a set of kitchen cupboards and a large counter top that he had promised his wife. So he called Andy into his office and asked him to complete the job for him.

But, alas, Andy refused. He told the warden, "Gosh, I'd really like to help you but counter fitting is what got me into prison in the first place."

A doctor and a lawyer were talking at a party.  

Their conversation was constantly interrupted by people describing their ailments and asking the doctor for free medical advice.
After an hour of this, the exasperated doctor asked the lawyer, "What do you do to stop people from asking you for legal advice when you're out of the office?"
"I give it to them," replied the lawyer, "and then I send them a bill."
The doctor was shocked, but agreed to give it a try.
The next day, still feeling slightly guilty, the doctor prepared the bills.

When he went to place them in his mailbox, he found a bill from the lawyer.
