Good grief it's August already? Where did July go?!

 

Oh, now I remember. Wonderful visits with my family and then a great trip across half of the US.

 

What an adventure we've had. We actually drove from Massachusetts to Nebraska. Ned rode his bike across Iowa for the famous biking event called RAGBRAI. It's Iowa's version of the tour de France. Each day's ride was much shorter than the tour though, and the fare at each town that hosted the 20,000 riders overnight was pork, beef, corn on the cob and other very American prarrie foods. People ride everything from antique Sears catalog bikes to $5,000.00 Trek racing bikes to tandems pulling child carriers with kids and everything in between. Tons of fun, great new friends and all the corn you can eat! Part of the tradition for RAGBRAI is dipping your bike tire in the Missouri River on one end and then in the Mississippi on the other side, but mother nature had other ideas this year. Spring melt from snow in Oregon has flooded so much of western Iowa that there are actually 2 Missouri rivers in some places. We saw the tops of basketball hoops just lifting their heads above the water, along with the telephone lines, roofs of buildings and fields of corn completely wiped out. Prayers to all those who have lost their homes in this flood.

 

I visited my cousins in Decorah for a few days and saw the infamous Eagles nest (check this video!)

and participated in dancing in the streets for their Nordic Fest. A great time was had by all and now we are on our way home.

 

This week's newsletter is a short but sweet. I've included ideas for exotic fruits to brighten your summer table and, of course, humor to keep those endorphins flowing. Enjoy!

Exotic Fruits To Brighten Your Summer Table!

Nature's Bounty floods all the supermarkets during summer and I find this a good time to try different fruits and vegetables that were not part of my diet growing up in the US. I especially find exotic fruits refreshing, tasty and great at parties - everyone wants to know what they are and how they taste!

 

Here are a few to try - even if you're a bit timid about new foods:

 

Star Fruit (Carambola) is a waxy, golden-yellow fruit that tastes like a combination of citrus, apple, and plum that comes from Southeast Asia. Each fruit contains 40 calories and is a great source of vitamin C. Wash, slice, and eat the entire star-shaped treat -- there's no need to peel or seed it. Add it to salads, savory dishes or use as a garnish. Because it contains kidney stone-forming oxalic acid, people with kidney problems should NOT eat star fruit.

 

Mangos which also originated in Southeast Asia, are egg-shaped and range in color from green to yellow to red. Mangos are very high in the antioxidant vitamins A and C, potassium, fiber, and are easy to enjoy. Just peel away the skin, cut away the large seed, and enjoy the rich, orange flesh, bursting with a sweet, tropical taste. I love Mangos in my smoothies!

 

Kiwis grow on vines, are egg-shaped, and are best known for their fuzzy brown skin and sweet-tart flesh. Only 70 calories, kiwis are a great source of potassium and fiber, with twice the vitamin C of an orange. Although the skin is edible, most of us peel it off and enjoy the delicious green or golden flesh and tiny, edible seeds. Use kiwis in salads, smoothies, or eat them plain - they are delicious!
