Grilled Shiitake Mushrooms

One of my favorite foods to grill also helps boost our immunity!

The mighty Shiitake has both   anti-viral and cholesterol-reducing properties. Certain extracts of Shiitake mushrooms are used in Japan to strengthen the immunity of cancer patients during chemotherapy and radiation. You can find them in just about any grocery store, and the larger caps are perfect for grilling, so look for those.

Cut the stems off your Shiitake caps, wipe them with a paper towel, and then marinate them for 20-30 minutes in your favorite oil and vinegar dressing. They'll be too mushy of you marinade them longer, so set your timer. When your grill is good and hot, place the mushroom caps on the grate for about 4 minutes on each side.  If you like cheese, cut a few thin slices of a hard cheese like gouda, cheddar or manchego and place on top of the inside of the cap for about a minute until it melts, and then serve with other grilled vegetables like summer squash, sweet potatoes, leeks, garlic, asparagus, peppers, or corn on the cob.

Welcome to official summer! I don't know about you, but it's always felt like 4th of July is the start of summer to me. I enjoyed a lovely holiday weekend with my family members visiting from Virginia, and saw a beautiful fireworks display. My family is a crazy bunch, who love to sing, play guitars, and laugh. All of these activities release endorphins (feel good hormones), and we did a lot of singing and laughing this weekend, so I feel pretty good!

 

Fun, and good for us at the same time - gotta love that! Hope you enjoyed your celebration of the birth of our nation as much as I did!

Tip of the Week - Beach Basics For Your Back

Beach chairs

One of my summer time pet peeves is those beach chairs that come in their own bag with a shoulder strap. Am I the only one who finds them incredibly uncomfortable to sit in? We humans are not meant to be pack horses. Carrying anything heavy over one shoulder can cause a mis-alignment of our spines. More importantly, these chairs cause us to sit in a slouched position! While this position may feel relaxing at first, your back will not be a happy camper if you are sitting at the beach that way for several hours. I have to admit that they are convenient, so if you must sit in one, get up every hour and walk around for a few minutes, or play a game of Frisbee with the grandkids, or swim a few laps. Even simply standing up and stretching your arms toward the sky, then slowly bending down to touch your toes will stretch your back a little and keep those muscles from cramping up. And if you do feel a little stiff when you get up, try a little flex and stretch called Cat/Cow. Begin by standing tall with your spine long all the way up through your neck, and your hands on your hips. Then as you inhale, arch your spine slightly and tilt your head back. On your exhale, tuck your chin to your chest and round your back slightly. Remember that this is a small movement. Keep going for about four or five deep, full breaths and then relax.
