May 15th is Armed Forces Day, and the 31st is Memorial Day, so it feels appropriate to dedicate this newsletter to all of our men and women who are fighting in some tough places right now to keep us and other innocent people safe and free.  
 
Since May 9th is also Mother's Day, warm thoughts to all the Moms who will never get to hug their sons and daughters lost in battles.  My own Mom never got over the loss of my brother Michael, who was killed in Viet Nam in 1968.  Even when she was fighting her own battle with Alzheimer's, she would sometimes ask "what was the name of my son who died in the war?"  Let's all spend a minute right now to acknowledge, bless and send thoughts of love and appreciation out to our armed forces everywhere...

Here's a health tip for Moms, Dads, teens, and everyone who wants to look their best in shorts and tees, at those warm weather barbeques.
This time of year, fruits and veggies are more readily available and reasonably priced.  Farmers Markets spring up on every other street corner, so it's a good time to increase the amount of fruits and veggies you put in your mouth on a daily basis.  One of the best measurements I've found for portion sizes is a handful.  Make sure that your meat or protein portion is the smallest one on your plate and that you have at least 2 handfuls of veggies. 
 
Try out many different kinds of veggies until you find several that you like and then eat at least 2 different kinds at each meal.  For instance, I love swiss chard and for me it goes great with baked or grilled sweet potatoes and green beans.  I also love my grill; in fact I use it all year long.  woman holding vegetablesSummer squashes like yellow and zucchini taste fantastic grilled, are easy to cook, and have only 35 calories per serving.  No need to peel them,  just wash, slice them lengthwise, brush with olive oil, add your favorite spices and grill for about five minutes on each side.  Serve with a big salad topped with a few thin slices of grilled chicken and voila!  Easy, nutritious, and tasty too.   One cup of summer squash has 229 mcg of Beta Carotene, 49 mg of Calcium, 36 mcg of Folate, 346 mg of Potassium, 9.9 mg of Vitamin C, and 2.5 g Fiber.  This is just one example of how good, nutrient packed fresh veggies are for you! 
 
hungry womanWhen we're in a hurry, we often skip these valuable nutrients in exchange for convenience, but when we consume lots of carbohydrates like bread, pasta, and pastries, our bodies go into starvation mode and end up storing every calorie that we consume as fat.  I know, it's a cruel trick of nature.  We think that bagel is filling us up so we won't feel starved, yet our body says - oh, oh!  No nutrition, we better store up those calories as fat so we can survive.   So skip the hamburgers and grill some Portobello Mushrooms instead.  Eat lots of fruits and veggies, get 15 minutes of sunshine before you put your sunscreen on, walk, bike, swim, and enjoy the season!

Groups of Americans were traveling by tour bus through Holland. As they stopped at a cheese farm, a young guide led them through the process of cheese making, explaining that goat's milk was used.  She showed the group a lovely hillside where many goats were grazing.  'These' she explained, 'are the older goats put out to pasture when they no longer produce.'  She then asked,
'What do you do in America with your old goats?'  
A spry old gentleman answered,  
 'They send us on bus tours!
