Today feels like Spring is on the way - please Mother Nature, make it so!  I've been enjoying walks on the bike path in Virginia and now that I'm back in the Berkshires, would love to be able to continue walking! shamrockIn honor of St. Patrick's Day, I've included a healthy cabbage recipe this month.  Many of us will be having our Corned Beef and Cabbage on the actual holiday, but thank "himself" that it only comes once a year because, unfortunately, one small serving of Corned Beef contains over 800 calories, 20 grams of saturated fat, 314 mg of Cholesterol and a whopping 3629 mg of salt!  It's a good thing that we don't eat it more than once a year.   The rest of our traditional St. Patrick's Day meal is good for you - especially the cabbage.  Cabbage is very low in Saturated Fat and Cholesterol. It is also a good source of Vitamin A, Thiamin, Vitamin B6, Calcium, Iron and Magnesium, and a very good source of Dietary Fiber, Vitamin C, Folate, Potassium and Manganese.  As long as we eat a small portion of the Corned Beef and only once a year, we should be ok.   

 

Roasted Cabbage with Black Bean Garlic Sauce

Preheat oven to 500°F. Toss 1 head of cabbage (cut up) and 4 teaspoons of olive oil in a large roasting pan.  Spread out in an even layer and roast until it begins to wilt and brown, about 15 minutes.  roasted cabbageWhile this is cooking, combine 2 Tablespoons of rice wine (or sherry) and 4 Tablespoons of Black Bean Garlic Sauce (found in Asian stores); drizzle over the cabbage and toss. Roast until tender or about 5 minutes more. Then toss with some minced scallions, 2 tsp. each of vinegar, & sesame oil.  Salt & pepper to taste.  If you like things spicy, add a little hot sauce.   This is a yummy recipe & very good for you too!
 

Sleeping Pigeon Pose

Since it's starting to feel like Spring, and many of my friends have mentioned that they're out doing yard work, here is a good stretch routine you can practice before and after your gardening for healthy knees, hips and back:
 
Begin on all four limbs with hands under shoulders and knees under hips.  Take a few deep, full breaths here first, then slide your right knee up so it's between your hands with the lower portion of that leg angled slightly toward your left wrist.
 
Now slide your left leg back as straight as is possible for you and lower your body down over your legs.  If you can go all the way down - fantastic!  If not, you can hold yourself up with arms or forearms.  Keep your back as straight as possible and don't hunch. 
 
Breathe deeply for at least a minute here and then slowly go back to table position before switching to the other side. 
 
This is a Yoga Pose called Sleeping Pigeon that stretches all the muscles along your sciatic nerve.  It's good for your lower back, hips and hamstrings.  Simple stretching that takes only a couple of minutes before and after your yard work will pay off BIG in the long run!

Bodywork helps to reduce levels of stress hormones, reduces blood pressure and heart rate, eases tense muscles and stiff joints, and gives our immune system a boost. Wow!  Check your local health food store or health center.  Sometimes they have lunchtime neck and shoulder massages that last 15 - 20 minutes, are less expensive, and can bring tremendous relief.  Also check out student massages at local massage schools, or book packages of massages to save money and share them with your family, co-workers, etc.  Try bartering with a therapist.  I've traded massage work for Yoga classes and know of Massage Therapists that have traded for dental cleanings, car tune-ups and just about anything else you can think of.  Craniosacral Therapy is another good option for easing stiff, aching backs, necks and shoulders.  Craniosacral therapy releases tight muscles by placing very light pressure on an area or by putting their hands on the spot until the muscles slowly release. Try it, you'll love it!
