Canned pumpkin: So easy, so delicious!

Beverly says:  Carving pumpkins was never my favorite activity. I suffered through digging out seeds and orange slime to delight my kids with Jack-O-Lanterns at Halloween, but that's as far as it went. I know plenty of people who'd boil the insides for homemade pie. But for me, comparing the chore of it all to simply whipping out my can opener? In my book the hassle of fresh pumpkin is just a giant WHY!

But I do want to make Alicia's amazing Pumpkin Cobbler every single Thanksgiving -- and I want to start the feast with a lovely Pumpkin Soup. And this is why canned pumpkin is such a wonderful invention. You just open the can, scoop out the pumpkin and recipes practically fly together!

Finally, there's nothing at all in those cans except the pumpkin, perfectly pureed. You can even find canned organic pumpkin nowadays. (Of course there also is pumpkin pie filling that's sweetened, spiced and ready for pie, but that's not the product we're talking about here.)

Just to get you started, Alicia and I are proud to share several of our favorite pumpkin recipes from in our online Recipe Box! Click around on the links in this newsletter and you'll be transported straight to the recipe on our Kitchen Scoop site.
