The Flavors of Fall
  
There's a nip in the air, the leaves are turning crimson, and the days are getting shorter. It's time for soups, stews, and casseroles- those hearty dishes that fill us up and keep us warm. Here's one from Chef Cal, culinary arts instructor, we think you will enjoy.
 
Chunky Vegetable Stew
3 tb. olive oil
2 large onions, sliced thick
4 cloves garlic, crushed
2 - 14 oz. cans diced tomatoes
10 oz. sweet potatoes, peeled and diced
2 cups chickpeas, drained
1 tsp. rosemary, crushed
2 zucchini, diced
salt and pepper to taste
1/2 cup freshly grated Parmesan cheese, as garnish
 
Heat olive oil in large, heavy saucepan or Dutch oven over medium heat.  Add onions and cook for 10 minutes, then add garlic and cook 1 minute longer. Add tomatoes and their juice, chickpeas, and rosemary; simmer for 10 to 14 minutes. Cut zucchini into quarters lengthwise and then cut into ½" pieces, add to cooking vegetables.

Cook, uncovered, stirring occasionally until zucchini and sweet potatoes are tender, about 6 to 8 minutes longer.  Serve in large bowls and garnish with freshly grated Parmesan cheese. Add a small salad and a glass of red wine and you have a complete meal.

cold. If you have a new or gently used coat suitable for donation, ACE would love to gift it to someone in need. ACE is partnering with New Hope Housing for this years' coat drive. New Hope Housing serves individuals in shelters, transitional housing, and supportive housing.


Two convenient Fairfax County Public Schools drop-off locations are available: The Plum Center and Woodson Central Fairfax (entrance #13).
