Growing Change - One Vegetable at a Time

Our market is proud to welcome PV Produce, an initiative by Perkiomen Valley High School's Take Action (Environmental advocacy) group.  While selling veggies at our market, the group will be spreading the work about environmental issues and how to make positive changes.

They will be selling produce grown in the organic garden they began at the school this spring.  Since then, they have taken turns tending, weeding, watering and learning. The garden is on school grounds and funded by donations from the community.

They stopped by the market last week for a visit and to attend a workshop on organic gardening by the 4-HPenn State Cooperative Extension. We look forward to watching them grow.

It's Hot and We're Feeling Peachy!

Peach season is in full swing at Frecon Farms and at our market, I bought a bunch last weekend, and what I didn't eat en route to the shore during my post-market road trip last Saturday, I grilled as part of a delicious family dinner on Monday. Thank goodness, there will be plenty more of their sweet goodness at the market on Saturday.

Peaches might taste like dessert, but they are low in calories (about 60 each), contain vitamins and antioxidants, and are low no sodium or cholesterol. So peaches are great for breakfast, lunch, dinner and anytime-snacks, as well.

On Monday, we glazed them in a balsamic glaze, grilled them, and served them atop greens with grilled chicken, bleu cheese and slivered almonds. It was a delicious one-plate meal!

Grilled Peach and Chicken Salad

with Balsamic Ginger Glaze

Marinated Chicken

2 T. olive oil

Juice of 1 lemon

1 T. fresh thyme leaves

2 T fresh basil, chopped

Salt, and cayenne pepper to taste

3 boneless chicken breasts

Mix first five ingredients together, and pour over chicken breasts. Marinate for an hour or more before grilling. Remove chicken from grill to rest.

Balsamic Glazed Peaches

½ cup balsamic vinegar

1 T. minced ginger

2 T. brown sugar

3 peaches, pitted and cut in half

Preheat grill to medium heat. In a small saucepan on a stovetop, combine first three ingredients and heat over medium heat until glaze thickens. Let cool. Brush on the cut side and place cut-side down on the grill. Brush peel side with glaze, and turn after 5 minutes. Grill for about 3-5 more minutes until peaches are caramelized and slightly soft.

Remove, cool slightly and slice.

Salad

6-8 cups spring greens, (like Down Home Acres blend)

¼ cup crumbled bleu cheese

¼ cup toasted slivered almonds

Remaining balsamic glaze

Toss Salad ingredients with sliced grilled chicken and sliced peaches. Drizzle with balsamic glaze

Summer is a time to Sparkle.
