What's Fresh?
(Our Pick of the Week)
Today's' Riddle:
What's old and smelly and super and delicious?
Kale, of course!
As an edible plant species, it's old, dating back 2,000 years to ancient Rome and Greece. The leafy greens to be sold at our market by Down Home Acres and Longview Agricultural Center this Saturday will certainly not be old, however. They will be fresh from the fields, and ready for your table, just like the other spring veggies they'll be offering.
The kale might be a bit smelly though. It's like that sometimes, although fans of this versatile vegetable might insist otherwise. To me, however, there is no denying that, like cabbage and Brussels sprouts and its other cousins in the brassica family, kale has a distinct sulferic odor. It doesn't bother me, though. What it lacks aromatically, it more than makes up for in taste and nutrition.
And nutritionally, its super! Really, kale is a super food. It's packed with beta-carotine for good eye-sight, Vitamin A, and Vitamin C, and one serving provides 70% of the calcium adults need every day. Plus, it contains compounds that help lessen the risk of some cancers.
But, you say, "How does it taste?" In short, delicious. Use it in all sorts of stews and salads or saute' it as a side veggie. Plus, if you love variety you'll love kale. There are so many different kinds of kale that it is nearly impossible to name them and it's just as difficult to name the many delicious ways to cook it.
