Insalata Caprese
A Bit of Summer in Italy
The aroma and flavor of this salad always
takes me back to summer in Naples, and the
nearby island of Capri. Delight in the
heady scent of fresh basil, paired with
juicy, ripe tomatoes and creamy, fresh
mozzarella.
Basil grows well in the Northwest -- just
give it a sunny location and keep moist;
pinch back as you harvest the herbs. They
should last until the first frost.
- 1 pound fresh mozzarella, packed in whey
(liquid)
- 1 pound vine ripened tomatoes
- 18 to 20 fresh basil leaves
- 6 tablespoons best quality extra-virgin
olive oil
- 2 tablespoons balsamic or red wine
vinegar (optional)
- sea salt and pepper, to taste
Drain mozzarella; slice thinly. Core and
slice tomatoes. Arrange mozzarella and
tomatoes on large platter, or individual
salad plates, overlapping in alternate layers.
Set aside 4 basil leaves for garnish. Stack
remaining leaves, roll and cut into
chiffonade. Sprinkle over the mozzarella and
tomatoes. Garnish plates or platter with
whole leaves.
Drizzle with olive oil, balsamic vinegar if
desired, and salt and pepper to taste. Serve
at room temperature, and enjoy!
