Welcome to the first in our new Recipe of the Month series! Since Meals on Wheels of Syracuse is all about nutritious meals that taste good, we thought we'd share some healthy recipes with the community. This monthly feature will include healthy recipes from our own kitchen, local restaurant chefs and area foodies. According to our local farmers, both tomatoes and cukes are in season for just a bit longer so try this recipe after the BBQ and fried dough of the NY State Fair have worn off and tell us what you think. Recipe of the Month: Tomato Cucumber Salad |
Ingredients: - 4 tomatoes
- 1 medium cucumber
- 2 tbsp balsamic vinegar
- 1 tsp extra-virgin olive oil
- 1/4 tsp sugar
- 2 tsp chopped fresh basil
- Freshly ground black pepper to taste
Preparation: Slice tomatoes and cucumber thinly and place in a medium bowl. Combine vinegar, oil and sugar. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with chopped basil. Refrigerate or serve at room temperature. Total Time: 10 minutes.
