At Acetaia La Bonissima, they create strictly regulated Balsamic Vinegar Tradizionale in four different ages, which are made only from trebbiano grapes: the Yellow Ribbon, which is 15 years old; the White, 30; the Green, 50; and the Gold Ribbon, which is 80 years old! All bottles are 100 ml and prices range from $125-$500 p/bottle! It is a very labor-intensive, slow and low yield process, which puts the price into perspective. We feel fortunate to have discovered this gem, which you will see online and at the Market. It is well-balanced between sweetness & acidity, agreeable & dark. The Blue Label has been aged 60+ days and serves as an exceptional balsamic vinegar for table use.
