P.F. Chang's Bistro Fire Cracker Shrimp |

This is another great recipe courtesy of Red Rock Sunrise Publishing and P.F. Chang's
E-Cookbook. This recipe is the hands down favorite of diner's at P.F. Chang's Bistro! Give this one a try, it is sure to be a hit at your next get together.
Ingredients:
Fire Cracker Shrimp Sauce:
- 4 tblspn. Chili bean sauce/paste*
- 1 c. Rice wine
- 2 c. Chicken stock
- 4 tblspn. Oyster sauce*
- 2 tspn. Chili paste
Marinade:
- 1 tspn. Cornstarch
- 4 tblspn. Vegetable oil
- 1/2 tspn. White pepper
- 2 ea. Egg Whites
Directions:
Cook noodles until al dente. Shock in generous amounts of ice water, turning hand to speed chilling. Drain very well. Coat lightly with sesame oil. Heat wok, add one tsp. of oil. Saute shrimp in medium hot oil. Slightly undercook. Drain wok, wipe out excess oil. Add noodles and toss with 3 oz. Of Firecracker Shrimp sauce. Mound noodles into a large shallow bowl.
Clean wok. Stir-fry garlic and chili paste, add onions and bell peppers, add 6 oz. of Firecracker Shrimp sauce, and toss quickly. Finish with sesame oil. Place shrimp and sauce over noodles. Garnish with cilantro sprigs.
Serves 2
