May is Electrical Safety Month. Be sure to educate your family on ways to be safe around electricity.

 Label your circuit breakers
 Do it yourself tip of the month

Labeled Circuit Box Label each electrical circuit or fuse in your home's breaker box so anyone who opens the box knows which one powers which lights or appliances. If you don't know which is which, ask an electrician to label the switches for you.

That way, if you're having a problem with electricity in a particular room or with one appliance, you can flip the switch that powers just that area--no guesswork. If you see the individual switch is "off," you can solve the problem by flipping it back on.

 Person impersonates CHELCO employee
 

Caution Sign In late April, a member reported that he had received a phone call from a "CHELCO employee" named Ben. The caller said the member's power was going to be cut off at 10:30 p.m., but that he could pay the bill by credit card. Fortunately the member thought the call was a scam and didn't give out any information.

Both the Walton County Sheriff's Department and the Okaloosa County Sheriff's Department were notified. CHELCO does not call members and ask for credit card information. If you receive this type of phone call, do not give out any personal information and notify authorities immediately.

 Shrimp Pasta Salad

Shrimp Pasta Salad Ingredients:
  • 10 ounces dried campanelle pasta, spaghetti, or bow-ties (about 3 cups)
  • 1-1/2 pounds cooked, peeled, and deveined shrimp
  • 1 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green sweet pepper
  • 1 2-1/4-ounce can sliced pitted ripe olives, drained
  • 4 roma tomatoes, cut into thin wedges
  • 1 recipe Citrus Vinaigrette (see recipe below) or 1- 1/4 cups bottled Italian salad dressing


Directions:
  1. Cook pasta according to package directions; drain. Rinse with cold water; drain again.
  2. In a large bowl combine pasta, shrimp, celery, onion, sweet pepper, and olives. Stir in tomato wedges. Pour Citrus Vinaigrette over pasta mixture and toss gently to coat. Cover and chill for 2 to 24 hours. Stir before serving. Makes 10 to 12 servings.


Citrus Vinaigrette: In a screw-top jar combine 3/4 cup grapefruit juice; 1/2 cup salad oil; 2 tablespoons honey; 1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed; 1/4 teaspoon salt; and 1/4 teaspoon ground black pepper. Cover and shake well to mix
