Labor Day

 

Labor is defined by Webster as "an expenditure of physical or mental effort especially when difficult or compulsory".

 

As a pediatrician, when I think of labor I think of pregnancy and child rearing.  The word labor is used to define every delivery of a newborn. The work required to raise a child is tremendous.  We are grateful for every parent today.   

 

This weekend we celebrate the work of humans in all its forms.  We celebrate the architects that build the beautiful edifices of our society.  We celebrate the teachers for their tireless effort with the next generation of great Americans. We celebrate the farmers that produce our nourishment, the nurses that care for us and the musicians that keep us smiling. 

 

As you enjoy your barbecues this weekend, pass along good intentions to those that labor for others and the betterment of society.

School Lunches

While the Federal Government continues to subsidize the wrong food in the Farm Bill, school lunch changes are finally showing some health promise.  
 
Looking at a menu from Mecklenburg County Schools in North Carolina we see choices that aren't perfect but they are a vast improvement over the likes of Frito pie and daily pizza.  Improved main items are fajitas, lasagna, sub sandwich, chicken taco and baked chicken. Unfortunately, corn dogs, weekly pizza and chicken nuggets still grace the menu.  We need to push for more vegetarian options as main choice.
 
Side items are finally mostly vegetables, fruits and bean dishes.   Most schools are going away from sugar laden beverages and encouraging water with meals.  Halleluia, a miracle!
 
As consumers we still need to keep up the pressure on the schools to continue the changes.  The best way to continue the challenge is to vote with your pocket book.  On days that the school is offering a poor quality lunch, pack your child's lunch.  
 
At my children's school, the lunch offerings are only reasonable 2 out of the 5 days.  So we only buy on those days.  The consistency of negative purchasing power will push through change that will keep your child healthy and focused to learn.  
 
Support your local Farmer's Market - their food tastes better anyway.

Recipe of the Week

Lamb or Beef Burger Labor Day special - unlikely the kids will like this one.

Ingredients:

Beef or lamb - ground (local - not grocery store)
Red onion - sliced
Arugala - washed and dried
Cherry tomatoes thinly sliced
Dill pickle - sliced
Trader Joe's KansasCity Barbecue Sauce
Whole grain bread or pita
****Fresh sauerkraut

Directions:

Cook burger to desired temperature.  Place on grilled bread.  Layer with arugala, onion, tomato, and pickle.  Put the KCB sauce on the bread and eat away.  Add the sauerkraut for an extra flavor.
