Selenium - an essential micronutrient that is #34 on the periodic table of elements.  

 

Selenium has hit the forefront of nutritional discussions because of its necessity as a cofactor in redox pathways (detoxification/ anti- oxidation).  This has become a major avenue for research in neuro-behavioral disorders like autism and ADHD.  

 

Children and adults with these types of disorders often have dysfunctional detoxification systems.  They cannot effectively break down toxic chemicals and heavy metals and subsequently suffer cell breakdown, especially in the mitochondria, the power source of every cell.  

 

Selenium in adequate dietary amounts will support the enzymes involved in glutathione (detoxifier) synthesis and reduction.  Thus allowing glutathione to remove oxygen radicals and toxins from the cell.  

 

In diseases like Parkinson's and autism, this function is critical. 

 

Selenium is also necessary for thyroid hormone regulation.  

  

Food as always contains our friends.  Selenium can be found in nuts, cereals, meat, mushrooms, fish, and eggs.  Eggs seem to be a superfood.  Every time I look for a needed trace mineral, eggs are there.  The links give more concrete data on requirements.

Recipe of the Week

Beans and veges by Larissa

 

Ingredients:

 

Borlotti beans, cooked or canned, drained
Asparagus
Shallots, chopped fine
Garlic, chopped fine
Olive oil
Fresh parsley, chopped fine
Fresh basil, chopped fine
Red wine vinegar
Grated Parmesan cheese
Salt

 

Directions:

 

Cook the asparagus in boiling, salted water until just tender. Drain, cool in cold water, and drain again. Cut the asparagus into pieces about 4cm long.

 

Heat the olive oil in a saute pan over a moderate heat. Add the finely chopped shallots and garlic. Cook until tender and lightly browned.
Add the drained beans to the pan. Toss over heat until the beans are hot.
Then add the asparagus and herbs. Heat another minute until the asparagus is hot.


Add salt to taste.

 

Just before serving, stir in the vinegar and add the Parmesan cheese. Serve hot.
