Ahhhhh, summer time, late summer at that. We find farmer's markets, farm stands, backyard gardens, neighborhoods over-flowing and burgeoning with home-grown, fresh-grown produce. Mmmmm, let's take advantage of it!

Here's a recipe I've been practically living on for the last few weeks.  When on the road in Colorado, I chopped/diced for an hour every three days, filled the bowl, and had a nice, crunchy salad to munch till it was gone. Big bowls are best. I like it HOT!
