Researchers discover probiotic colonisation mechanism

Genes responsible for efficient colonisation of the gut have been discovered by a team of scientists at the University College Cork, Ireland.

The discovery of the genes responsible for small appendages in Bifidobacterium may help to explain how the probiotic bacteria colonise the intestine.

 

The research finding, published in Proceedings of the National Academy of Sciences (PNAS), comes after the team of scientists sequenced the DNA of Bifidobacterium breve UCC2003, showing for the first time that Bifidobacteria have genes which produce finger-like appendages known as TAD pili - which allow them to adhere to the gut lining and form colonies. 2012 Dairy Ingredients Symposium

The dates have been set for the 14th Annual Dairy Ingredients Symposium.  It will be held March 1-2, 2012 at the InterContinental Mark Hopkins in San Francisco.  The symposium is tailored to the dairy ingredient community, including professionals from food and beverage manufactures and suppliers, plus academics and government.  

 

Last year's program drew 121 attendees from 18 states and 8 countries. They were given the opportunity to gain insights on the science, technology and business of dairy ingredients through a program containing 15 oral presentations a panel discussion and technical posters.  For the first time, last year's program offered a one day pre-symposium workshop on understanding and working with dairy protein ingredients.    

 

The event was sponsored by the Dairy Products Technology Center at Cal Poly State University, U.S. Dairy Export Council, and California Dairy Research Foundation.

Elementary Kids Visit DPTC
Learn by doing kids 

The Cal Poly Learn by Doing Lab (LBDL)  played host to a weeklong hands-on science camp for 20 rising 5th and 6th grade students from Pacheco Elementary School, and helped train future teachers emerging from Cal Poly.  The goal of the summer camp was to give kids, mostly potential first generation college students, an opportunity to explore both science and college. Click here to read full article.

Grants and Awards

The Southern California IFT Section 2011 Education/Research Grant was awarded to Dr. Amy Lammert for her project "Expanding Dairy Foods Learning Outcomes".
 

California State University Agricultural Research Initiative FY 2011 - 2012 is funding a project titled "Improving the Sensory Attributes of Low Sodium Mozzarella Cheese" The project is being overseen by Dr. Nana Farkye, Dr. Amy Lammert, and Dr. Amanda Lathrop.

Global Cheese Technology Forum- Co-organized with Utah State University, this is a 2-day opportunity to learn about and discuss the major issues of a growing cheese and whey industry.

October 18-19, 2011          

Dairy Technology 101- Designed to be an introductory course which emphasizes basics of milk composition, milk quality, basic unit operations in milk handling and processing, and aspects of testing of milk and milk products.

IFT 2011 held in New Orleans was another successful show for the Applications Lab! On behalf of the Applications Lab we would like to thank all of our suppliers that provided the necessary ingredients in order to produce our dairy based prototypes that were served during the show. We would also like to thank DMI (Dairy Management Inc.) and USDEC (US Dairy Export Council) for all their support that allowed us to be part of this year's show.

One of the key trends at this year's IFT was high protein products.

Camille Perennec is a internship student working with Dr. Jimenez's group. She is a student from the Technological University Lasalle Beauvais in France. Her research at the DPTC will focus on dairy foods research and developing laboratory skills in chemical analysis and structure determination.

 

Melanie Jaloustre

Melanie Jaloustre is a internship student working with Dr. Jimenez's group. She is a student from the Technological University Lasalle Beauvais in France. Her research at the DPTC will focus on dairy foods research and developing laboratory skills in chemical analysis and structure determination 

 

Julie Lucca

Julie Lucca is a first year graduate student from Oakley, CA. She graduated from Cal Poly San Luis Obispo in June 2011 with a Bachelor Degree in Biology. Julie will be working on her Masters in Dairy Products Technology at the DPTC under Dr. Jimenez.
