 Dawson Sales Company once again showcased the ingredients we sell in chef created culinary snacks to highlight the flavor and the versatility of our suppliers' ingredients. The chefs created some new twists on some classic snacks, offered decadent and healthy sweets and shook up the savory world with innovative flavor combinations in the Dawson shakers. The chefs from KOR were on hand to discuss the flavor combinations and how to incorporate the Dawson Sales ingredients into these tasty treats.
Dark chocolate truffles were both indulgent and healthy because they were made with rich dark chocolate, loaded with chewy fruit centers brimming with flavor and antioxidants and spiked with a touch of Grand Marnier. For the adventurous, there was a selection of flavored  salts available for coating the truffles or to be used as a flavoring in the wonderful, hot sipping chocolate that took the chill out of the air. A contemporary spin was put on an old regional favorite, the Whoopie Pie, by sandwiching a delicious mixed fruit filling between two chewy coconut meringue wafers. Such a rich tasting treat and loaded with nutritionally dense ingredients! On the savory side, the chefs were shaking things up again with custom blended snacks with just a hint of sweetness to excite the palate. A delicious Tuscan mix featured dried figs and cherries, sun-dried tomatoes, biscotti cookies, oregano and lemon zest. Another mix that made a wonderful morning snack included raisins, dried mangos and blueberries, oatmeal crumble, honey grahams spiced with thyme, orange zest, smoked salt, cinnamon and sugar. Snack cups brimming with French fried onions, potato sticks, bacon, beef flavor, mustard, Worcestershire, BBQ sauce, tomato pesto, chives, thyme and creme fraiche provided a delightful and unexpected explosion of flavor as an abstract German potato salad shooter. The chefs were busy throughout the day as many people lined up to try their creations and learn more about the ingredients and how they were used.
