Special Exotic Fruit Series Part 4:  Passion Fruit -- This tropical fruit is rich in vitamins A and C.  It comes in deep purple and yellow.  You'll know it's ripe when the tough skin wrinkles.  Just cut the fruit in half then scoop out the sweet and sour yellow pulp and edible seeds.  Throw away the bitter-tasting skin.  I usually strain the seeds out of the pulp and use the leftover nectar as a honey substitute.
