Salt & Pepper Weekly News Special Correspondent Chef Lauren Von Der Pool Whips up dishes for Grammy Award-Winning Singer/Songwriter Erykah Badu ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Well-Known Vegan and Soul Singer Erykah Badu recently feasted on dishes prepared by Vegan and Raw Food Cuisine Expert Lauren Von Der Pool. On the menu -- Kale Salad, Rice and Cabbage, Exotic Fruit Platter, Vegan Vanilla Cake, Vegan Chocolate Brownie Balls and Mango, Pineapple and Ginger Juice. Badu became a vegetarian in her late teens and has been a vegan for more than a decade.
Von Der Pool (pictured on the left with Badu) made the mango drink (pictured below) especially for the singer to help soothe her vocal cords after she headlined at the 5th Annual Summer Spirit Festival in Columbia, MD. Click here to get the recipe. Von Der Pool says the juice is also a good home remedy for colds.

Badu is known for her silky rhythm and blues, hip-hop and jazz vocals. Her latest album New Amerykah, Part Two: Return of the Ankh is in stores now.

Goji berries are popular ingredients in Asian dishes and home remedies. They are bright orange red in color and rich in lots of antioxidants. Some refer to them as superfruit because their many benefits reportedly include protecting the liver, helping eyesight, improving circulation and sex drive. I usually buy them in dry form and add them to trail mix. You can also plump up the berries by soaking them in water for about 15 minutes. Then add them to sauces and salad dressings. Goji berries are available at health food store.
