Chef Lauren Von Der Pool's Cantaloupe Soup
Serves 2 to 4
Ingredients
  • 1 cantaloupe, seeds removed and cubed
  • A pinch of cinnamon
  • ½ tsp. agave nectar
  • A pinch of cardamom
  • Juice from 1 lime
  • Garnish -- mint oil (see recipe below)
Directions
  1. Mix all ingredients except mint oil in blender until smooth.
  2. Serve in your favorite bowl.
  3. Drizzle little mint oil on top; enjoy!

Mint Oil

Makes about 1 cup
Ingredients
  • 1 cup extra virgin olive or coconut oil
  • 1 bunch mint leaves
  • A pinch of sea salt
  • A pinch of raw sugar or agave nectar
Directions
  1. Mix all ingredients in blender until smooth.
  2. Strain mixture; discard solids.
  3. Drizzle oil on top of dishes as garnish.
  4. Store leftover oil covered in refrigerator; will last for about a week.
