In Honor of National Nutrition Month Chef "Tee" Terrell Danley promotes healthy eating at HHS headquarters

Chef "Tee" Terrell Danley recently whipped up nutritious dishes for the lunchtime crowd at the Hubert Humphrey Building in Washington, DC. The U. S. Department of Health and Human Services (HHS) invited Chef Tee to give out samples as part of its ongoing effort to encourage folks to make good food choices. HHS recently adopted Franceen Friefeld's Fill Up Not Out concept for the Hubert Humphrey Cafeteria's hot food line.
Chef Tee's menu included his signature dish, Mama Laura's Chicken and Hoppin' John with Brown Rice. Both are pictured below.

Tired of plain butter? -- Spruce it up with your favorite flavors. Leave the butter out at room temperature until it softens, then add chopped garlic, honey, chives or another ingredient you like. Chill mixture to blend, then melt it on meat or vegetables. Spread it on bread. Be creative and enjoy!

Salad dressing tip part 1: make your own -- Store-bought brands are fine, but homemade vinaigrettes are so easy to make, less expensive and taste amazing. Here's a basic recipe--vinegar or your favorite fresh citrus juice (lime and lemon work well), olive oil or another flavored oil, salt and pepper. How much of each ingredient? Everything is "to taste." For example, if you prefer a more acidic flavor, add more vinegar, if not, add less. If you feel adventurous, add other ingredients like honey, chopped garlic, diced jalapeņo--whatever you prefer. Combine everything in a blender and enjoy. It's sweet, luscious flavor and unique chewy texture makes it a great compliment to many dishes. For example, add some dried or fresh figs to your favorite cereal or salad. Poach some in red wine and serve with ice cream. Just make sure you gently rinse them off with cold water first, remove the stems and pat dry. Fresh figs are extremely perishable, so buy them a day or two before you plan to eat them. Added medicinal benefit--they are rich in potassium and fiber. National Pi Day Yes, it's pi without the "e"
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ March 14, 2010 was National Pi Day. This is a special time for mathematicians because it recognizes the irrational number that never ends (3.14...). It's also Albert Einstein's birthday. Why does Salt & Pepper care? 1) Pi sounds like pie, so most folks celebrate the occasion by eating pies. 2) Chef "Tee" Terrell Danley taught math for years before becoming a chef.

Home Cook Brian Reeve Running man this weekend
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Home Cook Brian Reeve is training for the Yuengling Shamrock Half Marathon in Virginia Beach, VA on March 21, 2010. He was inspired to run and raise money for the Leukemia & Lymphoma Society last year after his friend was diagnosed with lymphoma. Brian had to drop out a week before the race due to a knee injury, so he is planning to run this year to fulfill his obligation to his sponsors and himself.
