Vegan and Raw Food Cuisine Expert Chef Lauren Von Der Pool
recently participated in the Clean Energy Economy Forum at the White House with U.S Energy Secretary Steven Chu and U. S Interior Secretary Ken Salazar.  Von Der Pool and more than 100 other youth leaders were invited to the event to discuss what can be done to improve America's green economy.  The nation's green health is important to the chef because she is the founder and CEO of the non-profit Von Der Pool Gourmet and Healthy Living Services, an organization that teaches inner-city kids how to incorporate more nutritious foods into their diet and the benefits of recycling and composting.  Von Der Pool also met President Barack Obama at the forum.  Click here to watch her ask Secretary Chu and Interior Secretary Salazar a question.

No more dry cornbread! -- Here's a quick way to ensure that your cornbread is always moist.  Add canned-creamed corn to the batter.  I suggest using half a cup of creamed corn for a dozen, regular-sized cornbread muffins.  This tip works for homemade and store-bought mixes.  Enjoy!

Prunes aka dried plums -- Sweet, chewy, a bit sticky and oh so good! This natural laxative will keep you regular.  Prunes are filled with nutrients that include vitamin A, potassium and fiber.  Studies show that this dried fruit helps lower high blood pressure, cleanses the colon and strengthens the immune system.  Eat prunes or drink them in juice. They are also great baked in savory and sweet dishes.

Chef "Tee" Terrell Danley teaching at the DC Central KitchenChef "Tee" Terrell Danley is pictured on the left talking to students in the DC Central Kitchen's job training program.  In honor of Black History Month, he recently taught kitchen basics to the class that is scheduled to graduate next month. 

DCCK is a non-profit organization that feeds the homeless and trains them for work in the food service industry.  Chef Tee told the students that their heart is an essential ingredient to their success in the professional cooking world.  Click here to read his inspiring quotes in the DCCK e-newsletter.

Chef Tee often helps students at the DCCK, but this visit was especially poignant because he dedicated it to the memory of his dear friend, Chef Oscar Griffin, who recently passed away.  Griffin was a frequent DCCK volunteer.

is training for the Yuengling Shamrock Half Marathon in Virginia Beach, VA on March 21, 2010.  He was inspired to run and raise money for the Leukemia & Lymphoma Society last year after his friend was diagnosed with lymphoma.  Brian had to drop out a week before the race due to a knee injury, so he is planning to run this year to fulfill his obligation to his sponsors and himself.  Click on www.shamrockmarathon.com to learn more about the race.
