| Culinary Tips of the Week

Brian Reeve, home cook
Healthy holiday snack--Baby soy beans in the pod, aka Edamame, are awesome. My kids love these. I buy them frozen. Just steam and season to taste with kosher salt. Squeeze the seeds directly from the pod into your mouth with your fingers and enjoy!

Chef "Tee" Terrell Danley, restaurant owner/culinary instructor
Convection ovens--Most recipes are written for conventional ovens, so if you use a convection oven this holiday season, decrease the temperature by 25 degrees to ensure that your dish cooks properly. That means if the recipe instructs you to preheat your oven to 350 degrees, preheat the convection oven to 325 degrees.

Coconut Nog--This non-dairy drink is a great alternative to eggnog. It is rich in coconut which is an excellent source of essential fatty acids. Coconut strengthens your brain and beautifies your skin and hair. Try my Coconut Nog recipe below. Learn more about Von Der Pool's exotic vegan and raw food cuisine at vonderpoolgourmet.com. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Coconut Nog (serves 10 to 14) Ingredients*Three 14-ounce cans of organic coconut milk *Two 32-ounce cartons of sweetened almond milk *Agave nectar to taste *A pinch of cardamom *A dash of cinnamon *A little Grand Marnier to taste (optional) Directions--mix ingredients together; serve warm or over ice.

Home Cook Brian Reeve Running man in March 2010
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Home Cook Brian Reeve is gearing up to train for the Yuengling Shamrock Half Marathon in Virginia Beach, VA on March 21, 2010. He was inspired to run and raise money last year for the Leukemia & Lymphoma Society after his friend was diagnosed with Lymphoma. Brian had to drop out a week before the race due to a knee injury, so he is planning to run this year to fulfill his obligation to his sponsors and himself. Click on www.shamrockmarathon.com to learn more about the race.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Happy birthday Brian who celebrated his big day on December 20, 2009.

Season's Greetings from B. Smith Lifestyle expert, TV host, author and restaurateur
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Here's a tip that always helps get me through the holidays.
Don't stress--Pick a theme and create a menu. Assign everyone a particular dish to bring to your gathering, so guests don't show up with the same thing. Also, if you know you are going to use a lot of something, buy in bulk and save what you don't use.
Remember, whatever you do, do it with style. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ B. Smith's third cookbook, B. Smith Cooks Southern Style, is available in stores and online. The Very Best of B. Smith with Style will launch nationwide on PBS next year.
