Pecan Crusted Alaska Salmon
3 tablespoons Dijon mustard
3 tablespoons butter, melted
5 teaspoons honey
1/2 cup fresh bread crumbs
1/2 cup finely chopped pecans
3 teaspoons chopped fresh dill
6 (4 ounce) fillets salmon
salt and pepper to taste
6 lemon wedges
Preheat the oven to 400 degrees F. In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and dill.
Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
Bake for 8 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Garnish with lemon wedges. If you want a more rare salmon, bake about a minute less per inch.
Serve with Yam and Potato mash.

 "Gabby wray" is a two cabin Catalina 470 that has been optimised for cruising. She has been constantly upgraded and improved and her owners have maintained her to a very high standard. Major upgrades like a genset, dinghy davits and custom cabinets improve the cruising ability of the boat. The Catalina 470 was built at the Morgan factory to exceptionally robust standards. The construction of these boats was designed to be much heavier than most other production boats in this class. Twin wheels and wide-open uncluttered decks make her very easy to move around on under-way. As many offshore cruisers know, the ability to move easily about open, uncluttered decks is an important feature that has to be designed-in to a boat.She has an extensive equipment list and we are proud to represent Gabby wray. We are happy to co-broker her and do courtesy showings. We are also happy to pick-up and drop-off at the airport if you are flying-in from out of town.
