Feta cheese Lamb Burgers and oven roasted fingerling potaoes with mushrooms, pearl onions and cherry tomatoes
Serves 4
1 lb ground lamb meat
2 small bags of fingerling potoatoes
1 medium size bag or box of cherry tomatoes
1 medium size bag of mushrooms
1 small bag of pearl onions
1/2 cup of crumbled feta cheese
1/2 cup of chopped cornichons (cocktail pickles)
1 medium onion, finely chopped
1. Preheat oven to 375 degrees F 2. Place the peeled pearl onions and fingerling potatoes in an ovenproof dish and pour some extra virgin olive oil to coat everthing, grind some seasalt and fresh pepper over to coat as well. Roast until half way done, about 25 mins. then add the sweet cherry tomatoes and mushrooms, stir it together well, and cook for another 20 mins or until done.
3. While the potatoes are roasting prepare the minced lamb meat in a bowl, salt and pepper the meat and add the onion, crumbled feta cheese and the chopped cornichons. Mix well and shape into burger patties. Grill the burgers until done to your liking, timing it with the oven roasted potatoes.
No need for Hamburger buns!!!
