Summer is here and the big sailing events of the season are just around the corner for South Coast Yachts. We have the San Diego Yacht and Boat Show at the Sheraton in two weeks and right after that, the Beneteau Rendezvous at Two Harbors. We're excited because these events are where we get to see YOU! I had the chance to spend some time on the new "Bermuda Blue" 2011 Oceanis 50 over the 4th of July weekend and I'm fascinated with the beauty, structure, and accommodations on this boat. You will be too. She'll be the center of attention at the show. She's at our commissioning docks now, if you'd like to see her before the show. I hope you take the time to come see her and her sisters! You'll also see a sneak peek below at the newest First Series boat to hit the racecourse...The First 30! (Exciting!) 30" for the challenge of creating this new sportboat with an interior comfortable enough for family and friends. Beneteau's inhouse First series guru, Eric

Kouyoumdjian (aka Juan K) and famous professional sailor Michel
Desjoyeaux together for the first time. The team collaborated on

Prosciutto, basil and sundried tomato wrapped Halibut.
3 leaves basil per fillet
4 slices prosciutto
1 teaspoon of sundried tomatoes
4 (4 ounce) fillets halibut
Salt and pepper
2 tablespoon olive oil
1. Preheat oven to 400 degrees F
2. Lay 3 basil leaves on each slice of prosciutto, spread sundried tomato on top of basil leaves. Season the halibut fillets with salt and pepper, place them on one side of the prepared slices of prosciutto, and wrap the fish fillets with the prosciutto,basil and sundried tomatoes.
3. Set an oven-safe skillet over medium-high heat. When the skillet is hot, pour in the olive oil and place the wrapped halibut fillets in the pan.
4. Cook the fillets until the prosciutto is golden brown, about 4 minutes. Flip the fillets over and move the pan into the preheated oven. Bake until the fish is firm to the touch and cooked through, about 5 minutes.
Serve and enjoy!  |
