Dear Sailing friends,
What a fun Spring we are having at South Coast Yachts! It seems like the pent up demand for the best sailboat value on the market, along with the big Beneteau sale has made our commissioning docks buzz with activity. Thank you to all of our new customers (and now friends) who chose a new or used Beneteau with South Coast Yachts! We are now out of 2010 boats and eagerly anticipating the arrival of the 2011's in a few weeks. Our South Coast team of Mark Richards, Yvonne Stern, Jay Bernstein, and now, Paul Briant, are excited to help you with your sailboat needs in San Diego. I'm so happy to work with such a great team. Please Welcome Paul Briant to the South Coast Team!!!
Paul brings with him a wealth of experience and expertise about boats and how to enjoy them on any ocean.
Paul Briant grew up in South Africa in a sailing family having been born in Grenada, West Indies while his family was cruising the Caribbean. Most of us boat salesmen "say" we were born on a boat, but this guy REALLY was! He left South Africa to work on mega yachts in The Mediterranean and he and his wife worked together for eight years as professional yacht captain/chef team and sailed throughout the Mediterranean, Caribbean, Bahamas and US East Coast. They settled in San Diego In 1998 and started a family. He worked for H&S Yacht Sales as the quality control and delivery manager till 2007 and then moved into sales selling new Hunters and Jeaneaus. We are proud to have such a knowledgeable expert choose the Beneteau brand to represent in San Diego and serve you and you will enjoy meeting him.

We hope you can join us for our second Raft-Up in La Playa on Saturday June 5th from 11am - 4pm.

Topics of our "on the water seminar" will include: - How to service your in-mast furling
- How to service your sails
- Stem to stern walk through maintenance
- Stand Up Paddle Surfing. We're bringing the boards for you to try this fun new sport, which is ideal for storing on a cruising sailboat and enjoying at Catalina!
- How to enjoy a raft up party cocktail (this is the easiest to learn!) See photo above of April raft up graduates testing their skills at this afternoon favorite pastime.

May's easy recipe.

Chicken Tenders with Sundried Tomatoes and Feta Cheese
1 cup diced oil-packed sun-dried tomatoes, plus 1 tablespoon oil from jar
1 pound chicken tender, cut into 2-inch pieces
1 bunch broccoli rabe, chopped
1/2 cup sliced pitted green olives
1/4 cup organic chicken stock
Freshly ground Sea salt
Freshly ground black pepper
1/3 cup crumbled feta cheese
Heat the oil from the sun-dried tomatoes in a large skillet over medium-high heat. Add chicken and cook until golden brown on all sides. Add tomatoes, broccoli rabe, olives, and 1/4 cup chicken stock, season with salt and pepper, cover and cook 4 to 5 minutes, until broccoli rabe is cooked but still a bit crispy and chicken is cooked through. Remove from heat, transfer to a serving plate and top with feta cheese. Serve with Linguine or Angel hair pasta or rice.
