From our front porch here at the Blue Rooster Bakery and Café, signs of summer are everywhere we look! We enjoyed watching the Cranbury Memorial Day parade, we overhear schoolchildren counting down the days (only 3 more days of school!), and we are all too often part of the steady stream of customers lining up on North Main Street for ice cream! Summer will be the most exciting time yet for the renovations at the Blue Rooster. Our extension is built and the inside work is continuing full steam ahead -- including installation of our commercial kitchen. What Goes into a Commercial Bread Bakery?
The bulk of our work to make 17 North Main Street into The Blue Rooster Bakery & Café entails building the foundation, walls, and roof to enclose our full-function European bread bakery. Bob's training and work experience in Ireland provided a firm starting point for his "wants and needs" for the bakery space.
Bob's vision is a well-organized space with each piece of equipment in the optimal spot to support high-level productivity from each baker and the bakers' helper as well -- more than 20 pieces of equipment in all.
With the Blue Rooster's concept of making a wide variety of products (breads, pastries, tarts, quiches, cupcakes, and cookies) we need a range of mixers, work surfaces, specialized tools like the laminator (vital to the production of flaky, buttery croissant), and of course, the ovens. Breads further require deck ovens with steam injection to develop the crust to the right level of thickness and chewiness. Tarts and pastries, quiche and cupcakes require convection ovens, more like the ovens we all have at home.
So, to produce consistently high quality product, the ovens are key. After much research and discussion with a range of artisan bakers, Bob selected Doyon ovens. We have kitchen installers Singer Equipment Co. who are expert at moving a new food business from vision and concept to reality. Donna and Ed, our team at Singer, are taking each piece to position it to meet Bob's requirements, working closely with our General Contractor, Mike Toth. Together, we are all working to have everything on site, installed, and inspected with time to spare to meet our Grand Opening Week.
Once we open the doors, you will see proof of how the bakery kitchen is working with our WALL OF BREAD.
When you enter the Blue Rooster, take time to swing by the retail room before your meal and you will see the full array of breads, rolls, pastries and other treats that the bakers are offering that day. There will be a core set offered each day with rotating specialty breads each week. Look for the Walnut Apricot bread --- one of my favorites! It is delicious warm out of the oven or lightly toasted with a touch of butter. You will surely come up with your own favorite before too long!

Meet our Partners
The Architect George Fett, AIA, of Fett & Foran of Yardville has helped us from day one to turn our vision into a reality at 17 North Main Street. Recommended by another satisfied client, George has created the perfect addition to complement the existing 1850 structure.
George has taken us from vision to signed and approved drawings ready for the builders. His practice does work for large organizations like Princeton University to small businesses like the Blue Rooster, as well as residential projects large and small.
George is the right match for the Blue Rooster and for the town of Cranbury. He "gets" the historic angle and the need to craft works to fit our Main Street.
The Builder
What building project doesn't need to save money and do the job ASAP? The Blue Rooster is no exception!
Once we had the township go-ahead and all the trailing reviews and approvals, we put the building project out to bid and selected Mike Toth. Mike has a long list of satisfied clients in Cranbury and the surrounding area. We anticipate making that list longer upon successful completion of the Blue Rooster project. |

Guess Our Opening Date Contest!
