Greetings!
Where does the time go? It is almost the fourth of July! Doesn't that mark the middle of the summer? It seems like school just got out last week. Amazing how fast time goes by. When I think about it, it makes me realize that every minute of every day really does count. I have to take it one minute at a time, and make the most of it. With another competition in two weeks, I am almost there again. One more week of training then another week off from working out. I have continued to get leaner, and in this competition, hopefully that will be rewarded. I am trying not to let the final weeks of my prep take over my life! :) So, on with business as usual.
I have decided that there is no reason that I should be tired or not get in a good workout. There is no reason that I should feel drained or not want to do anything. I am fine. I am stronger than ever in the gym, so I am able to function. I'm not weak. I am eating enough. I have decided that I am fine. I have increased my weights in the gym, and gone on working out even more intensely than before. It feels good! I am pushing myself, to not only work harder there, but also in life. If I am going to compete, my life cannot be put on hold for 8 weeks. It just does not work that way. I have to be able to fit it in. And I am bound and determined to do that for the next two weeks...I know, it is not a long time, but we will call it a trial period! :) I can live life and contest prep.
Next week is the 4th of July. I am canceling class on Monday the 4th, but I will have a Saturday workout on the 2nd. This morning's workout was awesome...it was a great day to run outside! We did amazing. Fast, strong - I was impressed! Even Caitlin admitted that it was fun! So, if you want a great workout it is the best way to start your holiday weekend.
Join us next Saturday! It will keep you focused on your goals, through the celebrations and parties. When you work out in the morning, you are much more likely to make better choices all day long.

Tomato & Cucumber Salad
I have been looking for a delicious veggie salad that I can take to my family Fourth of July picnic. This looks exactly like what I have been dreaming about. I LOVE cucumbers and tomatoes together. Yes, if would be much better if the tomatoes were fresh from the garden, but the sweet cherry tomatoes from Sam's will work just fine!
I also love having a veggie salad already prepped in the fridge so I can just grab a fork and eat it as I am cooking my eggs for breakfast. It is such a great way to get my first veggie in and start my day out right! I have some fresh dill in the fridge from my CSA, that will make a wonderful addition to the parsley that is called for. I will not add the entire fourth of a cup of olive oil, I don't think that much is necessary.
This is a great side dish to take with you to any picnic or cook out that you are going to next week. It is always a GREAT idea to take veggies with you as your contribution, just in case there are no other veggies for you to eat. At least you know you can get some grilled meat and have your veggie salad.
Ingredients
- 6 large ripe tomatoes, seeded and chopped
- 1 cucumber, peeled if the skin is bitter, seeded and chopped
- 1 small red onion, chopped
- about 1 cup fresh curly parsley or other herbs, chopped fine
- juice of 1 lemon, strained
- about 1/4 cup unrefined extra virgin olive oil
- unrefined sea salt and freshly ground black pepper, to taste
Method
- Toss the chopped tomatoes, cucumber, onion and parsley together in a big mixing bowl but take care not to bruise the tomatoes too badly.
- When the the vegetables and parsley are thoroughly mixed together, pour the juice of one lemon and 1/4 cup (or less) unrefined olive oil over the salad. Stir it again.
- Generously season the salad with unrefined sea salt and freshly ground black pepper.
YIELD: About 4 to 6 servings for vegetable lovers, 8 servings for everyone else
