Wow.  This is totally amazing.  I have never been leaner in my whole life.  I cannot believe how this has come together so perfectly this time around.  I have amazed myself...

 

I am so ready for this competition.  I have put in the work, not just in the last 8 weeks, but they have been the most intense.  My diet has been pretty much 100% perfect.  Twice a day in the gym.  I am a fat burning machine!  :)  I will say that this was better than the other two preps, by far! 

 

I am so excited to be able to look back over it and share a few of my favorite things.  My most favorite thing is my will power.  I set a goal, and I laid out a plan and I accomplished what I set out to do.  I have more motivation and determination inside me than even I knew was in there.  Take a look inside yourself, if you want to accomplish your goals, you have it in you.  After doing this, I have no doubt in my mind that ANY goal is achievable.  You will have to work for it, no doubt, but anything that is worth achieving, is worth the work.  And when you step out on your stage, goal in hand, no one can take that away from you.

 

The next things are  coach related...which, by the way, was MUCH easier this time on the relationship than the last.  :)  This prep, I got lean so quickly, I have gotten to add calories back in to my diet!  Hearing your coach say, "well, we need to add 10 grams of fat today," is like hearing a bird chirping for the first time in the spring, or even in your whole life.  :)  And hearing him say, "you are ready" at three weeks out - AMAZING.  And the best one is hearing that the extra cardio and the second workout each day are no longer necessary!  The last cardio that I had to do was the fun run on Saturday with you all!  No more step mill...no more sprints...The consistent three weeks of two-a-days paid off completely! 

 

I have even found some new favorite foods that I am excited to share!  I have been eating very well on this diet!  My old stand by, eggs, are still in the mix, but I have found some new creative ways to get dessert.  Pumpkin protein pie.  You will be in heaven when you try it.  I am amazed!  Ranch burger and ranch pork chops.  YUM!!  You can even make ranch dip for your veggies.  I am feeling very generous, yes!  :)  My protein shakes have also been saving the day.  Especially with the addition of fat - I can add a tablespoon of heavy cream to my chocolate shakes and I think that I am having a frosty at Wendy's.  No joke...it might even be better, because I don't go into a sugar coma after I drink it!  So when I can eat nuts again, and I can put some PB in there, I will probably think that its a blizzard and I won't even need DQ!  :)

 

Another favorite thing, how much I love you and your hard work.  I am impressed daily by how hard you push yourselves for me.  I know that we have had some HOT days in the gym, but you all made it through.  You all did everything that I asked, and sometimes more.  You inspire me, just like I hope I inspire you.  I know that each of you have different goals that you are working towards, and each of you are at a different place in your lives, but we all have a common goal of fitness, healthy, energy, well-being.  We all have someone who we push ourselves for. 

 

Set your goals out of reach.  Make the journey the best that it can be.  And know that you are an amazing woman, who literally can do anything that you set your mind to.  I don't just say it.  I live it.  I never dreamed that this was possible for me, if it weren't for Chris seeing my potential, I would never have my pro card a week away.  Thank you, Honey for believing in me.  Thank you ladies for making me want to work as hard as you.  Stay positive and believe in yourself.

Pumpkin Protein Pie 

 

These recipes are very easy and very yummy!   I am not a gourmet cook on this diet, that's for sure, but I do like to find ways to eat things that I love, and still stay on the diet.   As a kid I remember mom and I mixing up a pumpkin pie (without the eggs) and eating it with spoons.  We loved to bake and cook together, well, we still do, we just don't get to do it as much as we used to.  So this is a throw back to my childhood...and kind of like comfort food.  Mom got to try some this weekend and she approved...I think that she licked the bowl it was so good.  :)

 

1 can Libby's pumpkin

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon cloves

1 scoop vanilla protein powder (I started using a different vanilla than the one that you all use, and it is a little more vanilla"y", so you may have to add some vanilla extract - let me know)

dash of salt

 

Mix all the ingredients together and enjoy!  If you want it to be more like the unbaked pie filling, make your vanilla protein shake with water and add that like milk, but if you want it thicker, just add the protein powder.  Both ways are awesome.  I also added the eggs and baked it in a ramekin and it turned out pretty close in texture to real pumpkin pie.  I don't miss the crust too much, but crushing some lightly salted almonds and putting them on top gives you a little crunch and makes you feel like you have the crust. 

 

Putting pumpkin and pumpkin pie spices in with your vanilla shake is another great way to change up the ole vanilla shake.  And pumpkin is great for you!

 

 

 

Ranch Burger

 

 Chris puts the Ranch in his burger patties along with some shredded cheese and grills them.  They smell really good too...but I have not tasted that.  I like it the way I do it better!  :)  You can also make a delicious dip with the ranch powder and some 2% plain Greek yogurt.  Get out the carrots and broccoli.  It is amazing!  :)

 

-1 lb. LEAN ground beef

-1 onion (I like the sweet ones), chopped

-1 packet The Fresh Market  brand ranch dressing mix (if you don't normally shop at TFM, make the trip to get the ranch powder.  It has SO many less chemical ingredients than the other packets that you will get at the other stores.)

- Whatever other herbs or spices that you have - garlic is great, fresh herbs, even chopped spinach are delicious in here!

 

Brown the burger and cook with the chopped onion until done.   Add the ranch packet.  Eat with veggies.  It is so good.  Like ranch flavored taco meat!  I could eat it all day!  It is really good with a little sprinkle of cheese on top as well.  Be creative.

 

 

 

Ranch Pork Chops

 

Lean pork chops

TFM Ranch Powder

 

Sprinkle the ranch powder on the pork chops and kind of press it in.  Grill or cook on the stove in a skillet.  Enjoy!  Don't cook the pork chops to death, and they will be tender and juicy.
