Where has May gone?  This month, and this whole year have been flying by.  With getting ready for the RKC, and now getting ready for the show, I have been busier than ever!  I guess doing what you love every day makes the time go by faster! 

 

I have some really good news for you.  Chris told me that I am ready to get on stage!!!  YAY!!!  Three weeks out - that is amazing.  And that he is not going to have to take any food away this week!!!  My hard work is paying off.  I have been diligently getting to the gym twice a day every day and taking about an hour walk in the evenings.  It is paying off!  I wanted to show him and myself that I could do this without having to go low with my calories.  Thank goodness!!  I know that you all don't want me hungry any more than I want to be hungry!  :) 

 

So, thank you for the support over the last 5 weeks and the extra motivation to get this done.  It has gone by so quickly this time, and with a lot less effort and strife.  I have felt better and gotten leaner quicker.  I am ready to get up on stage and win again.  I have never been more sure of anything before in my life (well, except, of course, how much I love Chris).  I was even thinking today, that I might enjoy doing this (I said might...).  The challenge that I have placed on my body is not like anything else imaginable.  I have never had to work so hard to accomplish a goal.  So I guess that makes the success even sweeter. 

 

I went to a graduation party today, and I was thinking about the graduates and how they have their whole lives in front of them.  They probably won't realize it for years, but they can do anything that they dream about.  At their age, anything is possible.  But that does not mean that you cannot dream, set goals, and accomplish them either.  Life is not over until that final breath is taken.  We never know which breath will be our last, so use every moment to take yourself closer to your goals. 

 

And speaking of goals, think about what yours really are.  Many of you completed a goal sheet when you started, and probably have not thought about it again.  Start thinking.  This year is almost half over.  Have you gotten closer to what you really want out of life, or farther away?  Start taking the steps that you need to to get you where you want to be.  Make the next six months all that they need to be to get you there before 2011 slips away!  So much can happen in a year.  It has not even been a year since I competed for the first time, and now I am getting ready to turn pro. 

 

Really ask yourself what you want out of your life, out of this year.  Be completely honest.  Then start today and visualize that goal every day and make the choices that you have to make to get yourself there.  You can do it.  You have the biggest support group.  Ask for help.  Reach out.  You will be surprised at how many other ladies may be struggling with the same issues that you have.  You are not alone.  I believe in you.  Figure out what you want and I will help you get there!

  

I love you!  I hope that your long weekend is going great!!  Remember that we will not be meeting at the regular time tomorrow, Monday, Memorial Day.  We are meeting at 8 AM at the track at IWU.  It will be a fun workout, that does not involve running three miles...  :)  Please DO NOT go to Gymnastics, Etc tomorrow...no one will be there!

Flank Steak with Citrus Marinade

Since the weather is going to be awesome tomorrow, I thought that we needed a recipe that uses the grill!  This sounds delicious.  I love citrus and garlic in marinades.  And since it is absolutely delicious and in season now, try grilling some asparagus to eat along with it!  Salt and pepper, a squeeze of lime juice and some olive oil and you will be set.  I LOVE asparagus and steak!!  Enjoy. 

 

Ingredients:

  • 1-2lb Flank Steak (or skirt steak)
  • 1 orange, juiced
  • 3 limes, juiced
  • 4 cloves of garlic, peeled and crushed
  • 1 tbsp brown mustard
  • 1 tbsp raspberry blush vinegar
  • Green onion, sliced (for garnish)


Process:

 

  1. Combine juice of orange, limes in a small bowl.
  2. Peel, then crush 4 cloves of garlic and add to marinade.
  3. Add 1 tbsp of brown mustard, 1 tbsp of the blush vinegar, and whisk.
  4. Place flank steak in a 1 gallon Ziploc bag, add marinade, and place in a refrigerator for 30 minutes to an hour.
  5. Preheat grill on medium-high heat.
  6. Grill flank steak for 6-7 minutes per side on medium heat, turning once.
  7. Serve thinly sliced over grilled asparagus or a bed of spring greens.
