It was over 70 degrees today!  WOW!  I love the warm weather.  I was super motivated and got a million things done today.  Thank you mother nature!  I even was able to work out in my garden yesterday.  Ashley and I pulled up the weeds and got it cleaned out and ready.  We even planted sun flower seeds in pots.  She is going to inspect the yard each day to see where it is the sunniest to we know where to plant them.  :)  Hopefully we will have a big crop of sunflower seeds to snack on! 

 

I am ready to get some veggies growing this year!  I love fresh lettuce and spinach in the spring and baseball size zucchini in the summer!  My rhubarb is even popping up.  Soon the trees will be in bloom and it really will be spring!  The world is being reborn.  I cannot wait!  My favorite time is when the leaves on the trees just start, and everywhere you look, you see spring green!  It is amazing.

 

I just looked at the weather for the weekend, and it is going to be snowing on Saturday!  I keep waiting to announce the first official MyLeanBody Boot Camp Saturday workout.  Not this weekend, it will still be too cold!  :)  Maybe next week.  I would like to get one or two in before I am gone in April.  If you have not experienced the amazing Saturday workout yet, prepare yourself.  We have another, totally different, awesome, workout each Saturday while the weather is warm!  Just another boot camp bonus! 

 

As I mentioned last week, Chris and I are going to Minneapolis, MN, April 14-18 to get our Russian Kettlebell Certifications (RKC).  We will be working directly with the man who brought the kettlebell over to the United States.  If any of you have not been introduced to the kettlebell, it is like a cannon ball with a handle.  And it is my favorite training tool.  It builds functional strength and endurance.  It helps you burn a million calories, and it works you entire body.  With one kettlebell I can get you a workout like no other!

 

That being said, I am going to have to cancel boot camp for two days in April.  We leave on Thursday, April 14th in the afternoon and don't return until Monday afternoon, so class will be cancelled on Friday, April 15 and Monday, April 18th.  The five-day-a-weekers will receive a discount for the missed days.  Everyone else will be invited to come on an alternate day those weeks.  For the 6 AM class, I will have class Monday, Wednesday, Thursday the week before and Tuesday, Wednesday, Friday the week after.  Sorry for the inconvenience, but this certification will place Chris and I among the few elite athletes that are RKC's.  We have been training for this since last fall and are very excited to be going.

 

Wish us luck, it will be one of the most intense weekends and workouts of our lives!  :)

The 6 AM class is going to five days per week! 

I am planning on starting five days for the 6 AM class on April 1.  I don't quite have enough members to begin.  I am offering an extra referral incentive to help me get the class filled!  Instead of the normal $25 credit that you usually receive for each referral, I am going to increase that amount to $50 for any referral who signs up for the 6 AM boot camp in April. 

That means you only have to have 2 referrals and you will receive a FREE month of boot camp.  As always you will also be invited to the referral lunch which takes place the second Thursday of the following month at 11:30 AM.  The location changes each month.

 

Please tell your friends.  Help me, and help the ladies who are on the waiting list for the 6 AM class!  They want to be a part of boot camp too!  Thank you in advance for telling your friends and family.  I really appreciate the referrals!  Let's share the love! 

 

If any other 6 AM ladies want to add more days, please email me about that as well.  I would love to have you as many days as possible!!  :)  If you have already let me know that you want more, you don't have to email again. 

 

If you are on the wait list for the 5:15 AM class and you can make the 6-6:45 AM class work in the mean time, let me know, and as soon as I have a spot in the 5:15 class, I will get you in!

Artichoke scrambled eggs benedict

Serves 4

Ingredients

  • 8 canned artichoke bottoms, (1 1/2 cans), rinsed (see Shopping Tip)
  • 1 tablespoon extra-virgin olive oil, divided
  • 3 teaspoons chopped fresh oregano, divided, plus 4 sprigs for garnish
  • 1/3 cup chopped pancetta
  • 2 tablespoons reduced-fat mayonnaise
  • 2 tablespoons plain greek yogurt - not fat free
  • 2 teaspoons lemon juice
  • 1 teaspoon water
  • 8 large eggs
  • 2 tablespoons reduced-fat cream cheese, (Neufchâtel)
  • 1/4 teaspoon salt

Preparation

  1. Preheat oven to 425°F.
  2. Toss artichoke bottoms with 2 teaspoons oil and 2 teaspoons oregano. Place them top-side down on half of a large baking sheet. Spread pancetta in an even layer on the other half. Roast until the artichokes are just beginning to brown and the pancetta is crispy, 12 to 14 minutes.
  3. Meanwhile, whisk mayonnaise, yogurt, lemon juice and water in a small bowl until smooth. Beat eggs in a large bowl.
  4. Heat the remaining 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add the eggs and cook, folding and stirring frequently with a heatproof rubber spatula until almost set, about 2 minutes. Remove from the heat and fold in cream cheese, the remaining 1 teaspoon oregano and salt.
  5. To serve, divide the artichoke bottoms among 4 plates. Top each artichoke with equal portions scrambled egg, crispy pancetta and creamy lemon sauce. Garnish with oregano sprigs, if desired.

Tips & Notes

  • Shopping tip: Artichoke bottoms can be purchased in 14-ounce cans-found near other canned vegetables. If unavailable, substitute two 14-ounce cans rinsed and halved artichoke hearts.

Per serving: 282 calories; 19 g fat ( 6 g sat , 7 g mono ); 333 mg cholesterol; 9 g carbohydrates; 17 g protein; 3 g fiber; 737 mg sodium; 171 mg potassium.
