Quote of the Week

Greetings!

Happy Sunday!  A birthday is a chance each year to look back and reassess life.  What is going great, what needs to be changed, what can be done better, what never do again....

These milestones in our lives are not meant to be dwelled on.  They are to be celebrated.  It is not about the age that we are, but what we have learned in all the years we have been here.  Having gratitude that we woke up another day and that we get to experience life.  I am celebrating today where I am in life.  I know that I get to put the knowledge that I have gained over the past decade to use.  I know what I want out of life, and looking back, I sure know what I don't!  Through all of my experiences and mistakes I have learned a lot!  I will never be able to go back and change what I did "wrong," but I will learn from it.

I am so grateful that I am where I am today.  And if I were able to go back and change everything that I would like to, I might not be here today.  Life is a tapestry, and every single experience that we have, good or bad, makes us who we are and brings us to the exact spot that we are today.

Think about your family, your friends, your home.  Changing one thing in your past, as appealing as it might be, would change everything in your present.  Going back and "fixing it" might sound great, but the chance of you ending up in the same situation that you are in today is very small.  Everything in our past, makes us who we are.  I could change a millions things, but none of them are worth possibly giving up my family, my friends, my girls.

Thank you so much for the donations for my birthday.  I am so excited to go with Krissy on Monday to present them.  This was such a wonderful idea.  Ladies, I am so lucky to have you in my life.  I am so excited to be able to help more people in our community.  Spreading health and fitness is my life's work.  I have always said that I want to change the world.  And now you have made it possible to touch so many more lives - young and old.  So, thank you for making it happen.

Have a wonderful day.  I'm off to celebrate in style...I got this great new pair of sweats...  :)  Love, Emily

Sausage and Squash Saute

I have been getting the chicken sausage from Naturally Yours lately, and it is such a treat.  It is a little bit expensive, but it is totally worth it.  And since we only need two links for a serving, it makes 2.5 meals.  I have been hooked on the Mild Italian with Peppers and Onions.  For 90 calories per sausage, this is an awesome alternative to brats or hot dogs in the summer.  The ingredients are all natural, they are delicious, and they are already fully cooked, so you just have to heat them through.  I have also been browning one to eat with my eggs in the morning.  I am in heaven.  You can find it in the freezer case.

2 Chicken Sausages, cut into bite size pieces
1 yellow squash, sliced (or 2 if they are as small as the ones I just bought)
cherry tomatoes, cut in half
minced garlic
red pepper flakes
salt and pepper
coconut oil (small amount, I use about 1/2 teaspoon)

Melt the coconut oil in a skillet.  Add the sliced squash, tomatoes, chicken sausage and cook for a few minutes.  I like my squash and sausage to brown a little bit so I give it a few minutes before I move it in the pan.  Flip it around in the pan and allow the sausage to heat through.  Add the garlic and red pepper flakes and s&p to taste.

This is a beautiful meal and it tastes awesome!  I love to have bright colors on my plate and be able to make everything in one pan.
Enjoy!
