Sausage and Squash Saute
I have been getting the chicken sausage from Naturally Yours lately, and it is such a treat. It is a little bit expensive, but it is totally worth it. And since we only need two links for a serving, it makes 2.5 meals. I have been hooked on the Mild Italian with Peppers and Onions. For 90 calories per sausage, this is an awesome alternative to brats or hot dogs in the summer. The ingredients are all natural, they are delicious, and they are already fully cooked, so you just have to heat them through. I have also been browning one to eat with my eggs in the morning. I am in heaven. You can find it in the freezer case.
2 Chicken Sausages, cut into bite size pieces
1 yellow squash, sliced (or 2 if they are as small as the ones I just bought)
cherry tomatoes, cut in half
minced garlic
red pepper flakes
salt and pepper
coconut oil (small amount, I use about 1/2 teaspoon)
Melt the coconut oil in a skillet. Add the sliced squash, tomatoes, chicken sausage and cook for a few minutes. I like my squash and sausage to brown a little bit so I give it a few minutes before I move it in the pan. Flip it around in the pan and allow the sausage to heat through. Add the garlic and red pepper flakes and s&p to taste.
This is a beautiful meal and it tastes awesome! I love to have bright colors on my plate and be able to make everything in one pan.
