My one year boot camp anniversary!  Where did the last year go?  I want to take a moment to thank you for being a part of MyLeanBody Boot Camp.  You have helped make this the best year of my life.  Last year at this moment I was wondering if I should have even started boot camp in Bloomington.  I only had two women signed up (thank you so much Tori and Carla for taking the chance with me :) and I was not sure how or when or where to find more.  I had no idea if I would still be in business in a month, let alone a year. 

 

Then Sarah emailed me...I was so excited to have a third member.  Every time a new email would come in I would jump up and down.  What an amazing feeling that was!  My dreams were coming true, one email at a time.  I still jump up and down with every new email.  Because of each and every one of you, here I am.  Here we are.  Stronger, more confident, full of energy, and ready to make all of our dreams a reality. 

 

Ladies, I think about you and I get tears in my eyes.  I just read an email today about how social support is the number one best thing in weight loss.  The community that we have created, that you are a part of, is amazing.  Use the others women in class when you need them.  We all have days that we are not as strong as others.  That is what I am here for.  That is what the beautiful woman standing next to you in class is there for.  If you are feeling weak, ask for help.  Reach out to a new friend.  Ask for advice when you need it.   

 

Where else can you find a group of motivated, supportive, strong, amazing women like we have?  I don't think that there is anywhere in the world.  We are it!  We are the best.  :)  Think about how far you have come over the last year.  Tori...inches off your body!  Push-ups on the ground!  Remember that first time you did your pushups on the lower beam?  I do.  Remember how excited you were when you could do them on the ground!  I am so proud of you and what you are doing every day!  Thank you.  You look amazing! 

 

We have had weight loss, plank, and jump rope contests.  We have had 1, 5, 10, 20, 30, 40, 50, 60, and even 70 pound milestones in class.  We have made amazing changes to our eating habits.  We have changed lives, health, and attitudes.  We have gotten married this year.  We have set new personal bests.  We have gotten engaged.  We are having a new boot camp baby in April.  We are happier.  We have shared laughs.  We have shared tears.  We are proud.  We have made new friends.  We are strong.  We are doing what we need to do to reach our goals every day. 

 

I want to thank you for all of the support over the last year as well.  You have pushed me to work harder in my life than I have ever worked before.  You gave me the inspiration to compete in a figure competition.  I saw how hard you were working to reach your goals and I wanted to set a goal and achieve it for you too!  Here I am, a nationally qualified two-time figure champ.  I NEVER would have had the motivation to step out of my comfort zone and onto a stage if it were not for you!  Thank you for making me step up as well. 

 

You have changed my life for the better.  Thank you so much for all the the sweat...love...soreness...effort...that you have given each and every day.  I am here because of you.  I am a better, stronger, happier, more confident woman because of you.  Thank you for being a part of the best boot camp that was ever created!  You are an amazing woman and an integral part of our community.  Keep up the hard work.  Every single thing that you want out of life can be yours.  Set that bar high and reach for it.  You CAN do ANYTHING that you set your mind to.

Hot and Sour Soup

 

I had to go to the store today just for the ingredients for this soup.  Somehow the blizzard made me want to have hot soup!  Man was it good.  I am so impressed by how close to Chinese take out it is...and it is healthy too! 

 

2 Boneless skinless chicken breasts

 

Mushrooms - I did not measure, about a third of a big container, chopped

1 8 oz can of bamboo shoots

4 c. chicken broth

3 T unseasoned rice vinegar

2 T soy sauce

1.5 T chili garlic sauce - I used serracha

1 tsp. sesame oil

1 large egg

3-4 green onions, chopped

Handful of spinach

 

Cook and shred the chicken breasts.  Saute the mushrooms for a few minutes until browned.  Add the bamboo to heat through.  Add the cooked chicken to the mushrooms.  Add the chicken broth, vinegar, soy, chili garlic sauce, and sesame oil.  Allow the soup to come to a boil.  In a separate dish, beat the egg.  Remove the soup from the heat and slowly drizzle in the egg.  Top with the green onions.

 

I served mine (to myself :) over a handful of spinach.  The hot soup wilts the spinach down without over cooking it.  This is really delicious.  Enjoy!
