Yes, I watched the game.  The first NFL game that I have watched in years...if not ever...  :)  Yes, it was exciting, no I am not going to start watching football on a regular basis...It did remind me of all the football games that I watched my bro play in, and all the football that was on TV every weekend as I was growing up.  But now the world is right again, the food network is back on our TV.  :) 

 

This weekend Chris and I went to visit my brother and sister-in-law.  We had a fantastic time.  We talked training, nutrition, family and had a lot of laughs in between.  My niece and nephew are the cutest two children in the world, and they love me!  I got hugged, kissed, and crawled on more than ever!  Somehow when "Aunt Emmy" comes out of those sweet little mouths, I would do anything in the world!  I sure wish that they were closer.  We would spend a whole lot more time together.   

 

 This week, we are going back to every two week weigh days.  I know that some of you want to weigh every week because it makes you stay on track better, so you can still weigh each week.  Everyone else is going back to every other week.  Weight is not the best indicator and with the small flucctuations that happen each week, it can be very frustrating.  We will continue to keep our charts, but we will go back to every other week.  It is not just you, it is me too, who feels the frustration, and it is just not necessary. 

 

Do me a favor, try on your goal pants tonight.  Feel how tight they are, can you get the buttoned, how do they look?  In three weeks, we will try them on again.  That is the best indicator!

 

Every bite that you eat still matters.  The two week scale will be more forgiving, but don't think that you eat what you want.  Stay on track.  Look at how great Renarda is doing with her no grain challenge.  Make her be your inspiration.  Do not eat 100 calorie packs of cookies and think that you are doing anything to help your weight loss, the way your body looks, or your health.  Yes, I know, "but, it is only 100 calories"...100 calories of junk that should not be going in your body.  

 

Look at the ingredients of everything that you are buying.  If sugar or enriched flour are listed in the top three, do not buy it.  Healthy eating makes you feel better.  Healthy eating allows you to lose weight.  Embrace what you are doing.  Embrace feeling great.  Embrace the energy that you feel and the life that you are adding to your life.  Make sure you feel good about what you are putting into your body.  It is your choice to make, and the results that you get are directly related to your choices.  If you want it to happen, then make that choice.

Chicken Parmesan

 

You will be shocked at how amazing this is!  The gound almonds mixed with Italian seasonings tastes just like Italian breadcrumbs.  It is a true treat to be able to eat something this delicious and have it be healthy!   

 

4 Boneless skinless chicken breasts

a couple tablespoons of oil

1 C. ground almonds or almond flour

1/4 c. grated parmesan cheese

1 tsp. dried basil

1 tsp. dried oregano

salt and pepper

2 eggs, beaten

mozzarella slices, optional

Spaghetti sauce

Spaghetti squash, cooked and removed from the shell

 

Preheat oven to 350 ish and place a cookie sheet in the oven to heat.  I cut the chicken breasts into three pieces because they are so big.  I cut off the smaller end and then horizontally slice the bigger end so that it is not so thick.  They cook through a lot faster without burning the breading and they are easier to portion. 

 

Grind the almonds in the magic bullet until they are a flour consistency.  Place in a shallow dish.  Add the parmesan cheese, herbs and salt and pepper to taste.  Mix.  Beat the eggs and put it in a separate shallow dish. 

 

Preheat skillet and oil. 

 

Coat one breast in egg wash and then in the almond mixture.  Put it in the preheated skillet.  I have been breading one side of each chicken breast and putting that side down in the oil, then coating the top side of the chicken by sprinkling on the breading.  It gets very sticky and goopy when you try to bread both sides then put it in the pan.  I felt like I was wasting more almond than I was getting on the chicken.  It is much easier, it looks better, and it is a lot less waste to do it this way.  Flip the chicken and brown the other side.  Transfer each golden brown chicken breast to the cookie sheet in the oven to finish cooking through.  

 

Heat the spaghetti sauce.  Top each chicken breast with a small slice of mozzarella cheese while it is still in the oven.  Place one serving of spaghetti squash on the plate, top with sauce and one chicken breast.  You won't know that you are eating healthy.  I bet your kids will even like the chicken crusted in almonds.  Cut their chicken breast into strips and they won't know they are not eating normal chicken tenders.

* the measurements for the herbs and almond flour are estimates as I just throw it together and taste it to make sure it tastes like italian breadcrumbs...  :)  You can make the "breadcrumbs" taste like anything you like, so change up the herbs and make it just right for you and your family.

Keep up the hard work and keep pushing yourself to do more each week.  Your body will not change without a challenge.  I know that you work hard for me in class, but making the effort outside of class will make the most difference.  If it were easy every one would be doing it.  You can make the changes that you need to to acheive your goals.  If you need help, that is what I am here for!  Have a great night.
