How was your Christmas?  Mine was wonderful.  My family spent the day around the dining room table at my grandma's house.  It was a day full of stories and laughter (I cleaned up the dishes and made coffee when the conversation turned to politics and world events - that is not my kind of Christmas conversation:).  I also showed everyone my rendition of "Little Drummer Boy" and I did my back flip in the living room.  All in all, I was my usual self, and my family continues to think that I am a little bit crazy.  :)

 

I am sure ready for healthy eating to take back over!  I started my day off with a big bowl of Kale Salad (the recipe is below), two eggs and a half of a grapefruit.  I had a really great workout this morning.  I felt strong, but I know after I get Christmas out of my system, I will feel a lot stronger!  It is time to get remotivated for the new year!

 

How do we stay motivated?  The weather makes it very easy for us to stay inside and not workout as much as we do in the warmer months.  So it is up to us to get and stay motivated.  Some people set new goals to get motivated.  Some have an event to get ready for which keeps them motivated.  Others want to be thinner, healthier, stronger.  What motivates you?  Please share your thoughts and comments on our boot camp facebook page. 

 

We have one more week in 2010.  This week will be a celebration of all of the accomplishments that we have had throughout this year.  It has gone by fast, but we have all achieved many great things.  Think about what you have done.  Think about what you can do in the new year.  Dream big.  As long as you can imagine it, you can achieve it.  2011 can be your healthiest year yet.  You want to get fit?  You want to look and feel better than you ever have before?  You want more energy, to be more positive, to have more love in your life?  It is all yours!  Smile, stand up tall, have confidence, and know that you are taking care of yourself.  You are a strong beautiful woman.  You deserve nothing but the best this year! 

 

Think about your goals and what you want out of the new year and set your mind to go get it!  I believe in you and I know that we are all capable of so much more than we believe.  It is time to believe in yourself and make your dreams come true!

Massaged Kale Salad

 

Recipe modified from Aarti Sequeira, 2010

 

This salad is a delicious detox in a bowl.  The dark green leaves are the healthiest of the super foods.  If you have not yet tried kale, try it!  It is so good for you, you won't be able to help but love it!  Be sure to wash it.  Remove the stems.  And yes, you actually massage the leaves to help break them down.  Kale is pretty tough on its own, so after you put the first of the lemon juice on it and the salt, stick your hand in the bowl and massage or squeeze the salad.  It is weird, but it is GOOD!  My family loved it yesterday at Christmas dinner and I loved it this morning with my eggs!  What a great way to start the day!

Ingredients

1 bunch kale (black kale is especially good), washed, stalks removed and discarded, leaves thinly sliced
1 lemon, juiced
1 T extra-virgin olive oil
Kosher salt
2 teaspoons honey
Freshly ground black pepper
Small handful toasted pine nuts, about 2 rounded tablespoons

Directions

In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.

In a small bowl, whisk remaining lemon juice with the honey and freshly ground black pepper until a dressing forms.

This week we will be back on normal schedule.  We will work out all week and also have our bonus workout on Saturday.  I am ready to kick off the New Year with a kick butt workout, how about you?  Start your 2011 off on a healthy note.  Workout - Gym, Etc. - 8 AM - be there or be square.
