Massaged Kale Salad

This salad is a delicious detox in a bowl. The dark green leaves are the healthiest of the super foods. If you have not yet tried kale, try it! It is so good for you, you won't be able to help but love it! Be sure to wash it. Remove the stems. And yes, you actually massage the leaves to help break them down. Kale is pretty tough on its own, so after you put the first of the lemon juice on it and the salt, stick your hand in the bowl and massage or squeeze the salad. It is weird, but it is GOOD! My family loved it yesterday at Christmas dinner and I loved it this morning with my eggs! What a great way to start the day!
1 bunch kale (black kale is especially good), washed, stalks removed and discarded, leaves thinly sliced 1 lemon, juiced 1 T extra-virgin olive oil Kosher salt 2 teaspoons honey Freshly ground black pepper Small handful toasted pine nuts, about 2 rounded tablespoons
Directions
In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.
In a small bowl, whisk remaining lemon juice with the honey and freshly ground black pepper until a dressing forms.
Pour the dressing over the kale, and add the pine nuts. Toss and serve.
