Greetings!        

I hope that you have had a wonderful weekend!  I wish that it were as pretty as it was this afternoon, on Saturday morning.  It is sad to say, but we might be done with the Saturday morning workouts for the year.  We will see how the next few weeks go, but it is going to be tough running when it is below freezing (maybe for me more than for you...)!  Maybe we will have a mild winter and we can still get out there every once in a while.

This week marks the end of our competition.  We will have final weigh days on Thursday and Friday of this week.  I am super excited for my competition to be upon us!  This time next week we will hopefully have a couple more trophies in our possession!  And possibly some personal best's at the race on Sunday.  What an exciting weekend!

If you have not already, and you are planning on running in the Jingle Bell Race with us next weekend, please sign up today.  I got a notice from Tara that the last T-shirt order is being placed today or tomorrow, so to be guaranteed that you get your t-shirt in the size that you want, please sign up NOW (by midnight tonight)!!  It is really a great cause.  Let's get out there and make a big difference in our community!  Here is the link for more information and to sign up. .  
 
Please invite your friends and families to join us, we have 25 members now, and would love to reach our goal of 40.  Chris will be running with the girls, too.  I would love to have spouses, fiances, boyfriends, nieces, cousins, moms, etc. all join our team!  If things go the way I have them planned in my head, we will be celebrating my win at this race!  Go Team Blaudow!! 

I am so excited to hear so many of you talking about eating healthy and living healthy lifestyles.  That is so important.  This is the only body that we get.  Treat it with respect, eat healthy and make healthy lifestyle choices.  You will not regret it when you are 80 and still running around with a fit, healthy body.  90 is my goal to still be in the gym!  :)  I am serious that this is the fountain of youth.  Keep it up, and you will be turning back the clock!

Chili Chicken and Basil

 

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 Thai bird chilies or serrano chilies
  • 1 tsp soy sauce
  • 2 cups loosely packed fresh basil
  • 1 tbsp fish sauce
  • 3 cloves garlic
  • 1/2 tbsp peanut oil or coconut oil
  • 1/2 tbsp red-chili paste
  • 1 tsp fresh cracked pepper

Directions

1.  Finely chop the garlic and chilies, then use the side of your knife to press them together into a rough paste. (Add a pinch of salt to make this process easier.)

2.  Preheat a wok or stainless-steel saute pan over medium-high heat. Add the oil and the garlic-chili paste you just made, and cook for 2 to 3 minutes (be careful not to burn the garlic). Chop the chicken into small pieces and add them to the pan, cooking until they're lightly browned, about 3 to 4 minutes. Add the soy sauce, fish sauce, red-chili paste and continue to cook until the chicken is done all the way through, another 3 to 4 minutes.

3.  Add the pepper and basil, and cook until the basil is just wilted, about 2 minutes. Serve immediately.

 


 

Saturday Workout
  
No Saturday workout this weekend.  I will be on the road to my show!  Please join us, though, for the Jingle Bell Run on Sunday, Nov. 14, at 1 PM.  The link is above.  Bring your families.  We will have a wonderful time!  Like I have said before - if you are worried about whether or not you can make it 3.2 miles, trust me, if you can make it through boot camp, you can make it 3.2 miles!

Holiday Schedule
 It is hard to believe that it is time to start talking about the holidays, but they are coming up quickly.  I will have as many boot camp classes as possible over the holidays.   We will not be meeting on Thanksgiving or the day after (November 25 or 26).  We will also take Christmas Eve (Friday, December 24) off from classes.  We will be meeting on New Year's Eve for one last 2010 workout...  :)
