Greetings!        

Two magic words were spoken at the gym this morning..."You're Ready."  Hear the sigh of relief.  During my posing practice this morning, Chris told me that I am ready!  All of my hard work has paid off.  No more needing to be afraid that I am not going to make it, no more doubts.  Seven more days of HARD work, and I will be raising my hand in victory! :)  I knew that I was ready - ready for this to be over!  A little frustrated, de-motivated, and out of energy.  But now - I am back.  I can do ANYTHING for a week.  My diet will be perfect, my workouts will be extremely intense, and my mood will be so much better! 

Thank you so much for the hard work last week and all of your positive attitudes - especially on Friday!  You ladies are amazing.  You helped me more than you know on Friday.  You made me feel better, more positive, and ready to take on my day!  My workout went great.  I lifted more weight than usual, and did my sprints, no problem!  I have all of you to thank for making me feel the way I did when I got to the gym!  I really appreciate all of you more than you know!  I would not be able to do this, if I did not have your support, motivation, emails, and care!  I am so grateful to have you in my life! 

The class competition is about to come to an end.  The final weigh days will be the 11th and the 12th of November.  What things can you do for the next two weeks to get you closer to your goals? 

Can you sneak in an extra serving of veggies at lunch or for one of your snacks?  Can you eat a breakfast that is full of protein and no refined grains or sugar?  Can you get up and take a walk at lunch with a girlfriend instead of meeting in the cafe?  Staying positive and motivated will help you reach your goals.  Surround yourself with the kind of people who help you stay on track.  If you have a friend who is negative and whose actions do not match her goals, then don't be alone with her.  Bring another friend along when you hang out.  Stay positive, and do what you know you are supposed to do.  You get to decide your actions and no one else's!  You get to choose your circle of friends.  Make sure they are good for you.

Please invite your friends and families to join us.  Chris will be running with the girls, too.  I would love to have spouses, fiances, boyfriends, nieces, cousins, moms, etc. all join our team!  If things go the way I have them planned in my head, we will be celebrating my win at this race!  Go Team Blaudow!! 

Thank you so much for your hard work!  Your commitment to your health and fitness is something that will change your life.  Continue to strive for your goals.  Every day you have many opportunities to get closer or farther away.  Make the choices that will take you closer.  You can do it.  I know that it is hard, but it is worth it in the end.  You will be raising your hands in glory on the next weigh day!

Baked Eggs in Tomato Parmesan Sauce

 

This sounds really delicious to me.  I hope that it tastes as I imagine!  :)  I am super excited to make this after my show!  You know how I get if something is too good...remember my cauliflower addiction that I had while prepping for my last show?!?!!  :)  I know all of you know how much I love eggs.  So this is right up my alley!  I am going to get a hunk of parmesan cheese to use on this dish because I can just taste the difference it will make over the already grated version that is currently in my fridge.  I hope that you all enjoy it!  Let me know how it turns out! 

 

Ingredients

 

1 T olive oil

4 garlic cloves, thinly sliced

1 t. crushed dried rosemary

2 cans (15 oz. each) dices tomatoes in juice

1 can (15 oz.) crushed tomatoes

1/4 c grated parmesan

salt and pepper

8 large eggs

 

Preheat oven to 350 degrees.  Set four 12-oz ovenproof bowls or ramekins on a large rimmed baking sheet. 

 

In a large sauce pan, heat oil over medium heat.  Add garlic and rosemary, cook, stirring, until garlic is golden, about 2 minutes.  Add the diced tomatoes (with juice), crushed tomatoes, and 2 T Parmesan.  Bring to a boil.  Reduce to a simmer and cook, stirring occasionally, until slightly thickened, 2-4 minutes.  Season tomato sauce with salt and pepper.

 

Divide tomato sauce among bowls, reserving 1 cup.  Crack 2 eggs into each bowl.  Dividing evenly, top with reserved sauce and 2 T Parmesan cheese.  Bake until egg whites are just opaque (yolks should still be soft), 24-28 minutes, rotate sheet halfway through.

We will go for one more Saturday workout this weekend before my show!  Let's meet at 8 AM, Saturday, November 6.  IWU track parking lot.  Hopefully it will be just as beautiful as it was this Saturday...and maybe just a bit warmer...  :)
