Italian Beef
It is getting cooler out so the time for slow roasted meats is upon us. I have been making Italian Beef, and let me tell you, it is a treat! This is my mom's recipe, and it reminds me of my childhood! I have been eating it with sauteed mushrooms and onions - you don't need the bun. Serve this with green beans and cauliflower mash, and you will be in heaven! Thank you, Mama!! Enjoy. This recipe is a little bit spicy, so if you have little ones at home or don't like things too spicy, cut down on the red pepper a little bit. :) Cooking your meat like this is easy and delicious. Ingredients: 4-5 pound beef roast 2-3 c. water 1 small onion, grated or diced 1 t. red pepper 1 t. garlic powder 2 t. dry basil 1 t. dry oregano 1 t. salt 1/2 t. pepper 1 t. dry parsley Directions:
Preheat the oven to 300 degrees. Mix spices in a small bowl, rub onto all sides of the roast. Add water to the sides of the pan. Cover and roast for 3-3.5 hours. Or cook in a crock pot. Mom always used to slice the meat for sandwiches, but now, I have just been pulling it apart, taking out any fat I see, and leaving it in its cooking juices. Saute your mushrooms and onions to go with it, and pour a bit of the juice over the meat and the green beans for a super delicious and satisfying meal! |

Saturday Workout
