Greetings!        

What a beautiful weekend it is!  I hope that you have been able to get out and enjoy the great weather!  We went to the apple orchard with my grandma yesterday and it was fun.  There were about a million people there and it was more of a circus than an orchard, but still fun to see my family. 
 
It takes a lot of will power to stick to your diet in situations like that.  Everyone around you is eating apple donuts, hot dogs, and pie, but you are not.  You have goals.  You work too hard each day in class to blow it with one meal.  You can do it.  Your body does not need the junk, and it will actually feel better if you resist.  I know my body does.  So I said no to the "one little bite of this donut" and the "can't you just taste it?" or the "of course, Emily is the only one not eating."  I felt good about my decision to not eat at the orchard.  Watching everyone else eat such unhealthy foods, strengthened my resolve!  I had more will power and I was proud of how great I felt by not eating.
 
Then after the orchard, we HAVE to go to Jarling's, which is a frozen custard place in Champaign.  It is like a family tradition, every time we go to Champaign, we just HAVE to go to Jarling's and get a cold fudge.  We have been doing this as long as I can remember.  So, I am ready for it, I knew that this would happen, and I am once again, not going to eat anything.  At this point I am not sacrificing by not eating, because I know that I will feel like crap after a bowl of ice cream, so I really don't even want it.  I don't want the sugar coma, I don't want to be thirsty, I don't want the headache or the lethargic feelings that come about 20 minutes after eating junk. 
 
So, I enjoyed the smell of the freshly cooked waffle cones, and enjoyed the fact that I was burning fat and getting leaner while everyone around me was spiking their insulin levels and doing just the opposite.  Like Chris always says, if you want to lead the orchestra, you have to turn your back to the crowd!  Be different.  Be proud of your food choices.  Know that you do not have to partake in the cake or the food day for your co-workers birthday.  Know that every food choice that you make is taking you closer to your goals and be proud of that.  Don't let someone talk you into eating something that you know is not healthy.  Let all of the little comments that are made strengthen your resolve as well.  Think about how you will feel after you eat whatever it is in front of you.  If you will feel great and have lots of energy, then by all means eat it, but if you will have feelings of guilt or be mad at yourself, just don't eat it.  Save yourself those feelings and find something healthy to put in your body.  I promise the few minutes that it takes to eat the cold fudge is not worth the 45 minutes you just spend working your butt off in boot camp. 
 
Monday is weigh day again.  I hope that you all have had great weekends and are ready for it!  Our class competition is in full swing!  My competition training is getting tougher.  I am pushing myself to the limit every day in the gym...and in the kitchen.  I think about my goals everyday.  I rethink my decision to compete every day as well! :)  It is hard.  I know that just as much as you do.  I am with you trying to burn fat and get as lean as possible.  I am with you watching what I eat.  I know what you are going through, but it is worth every minute of it.  The final weigh in for the class competition will be November 11 and 12.  You have five weeks to show me and show yourself what you can do! 
 
November 13, I will be up on stage again.  I am planning on winning again, so my workouts are more intense and harder than ever.  This show will qualify me for Nationals in Chicago in June 2011.  The competition will be much tougher at this show.  Each of the competitors will be brining their best body, so I have to be even more ready than I was last time.  Can I do it?  How badly do I want it?  As my body changes over the next couple weeks, I will show you!  At 5 weeks out, I am racing to the finish line.

We have formed a team for the Jingle Bell Run this year.  The race is November 14, 2010 at 1 PM.   Please visit our team page to join.  http://JBRNormal.kintera.org/myleanbodybootcamp.  Please invite your friends and families to join us.  Chris will be running with the girls, too.  I would love to have spouses, fiances, boyfriends, nieces, cousins, moms, etc. all join our team!  If things go the way I have them planned in my head, we will be celebrating my win at this race!  Go Team Blaudow!! 
 
Have a great day.  Thank you so much for your hard work!  Make a commitment to yourself and to me during this prep.  If you want to get five pounds off in the next 5 weeks, you can do it.  I am going to do it.  Eat healthy foods.  Make good choices.  Turn your back to the crowd.  Ask yourself who you want to be more like...the motivated healthy fit ladies in boot camp, or the person who is offering you a big piece of retirement cake?  Stay active throughout the day.  Reach out to the other in class if you need support.  Ask me for help.  I can do it.  You can do it.  Let's work together.

Coconut Encrusted Chicken Salad 
 
Ingredients:
4 boneless, skinless chicken breasts
½ cup unsweetened coconut flakes
½ cup almond flour
Salt and pepper to taste
2 eggs
3 tbsp of virgin coconut oil
1 bag/8 cups of mixed salad greens or spinach
2 tbsp olive oil
2 tbsp lemon juice 

Directions:

Trim any remaining skin or white parts from the chicken breasts. (Note: I usually love the skin on chicken. In fact I find boneless skinless chicken breast pretty boring unless it is dressed up like what has been done here.) Rinse under cool water and pat dry using a clean kitchen towel or parchment. On a chopping board, cut the chicken into strips somewhere between ½ an inch and an inch thick. Set aside. In a shallow dish, combine coconut flakes, almond flour and salt and pepper. In a bowl, crack eggs and beat lightly. Dip the chicken strips first in the egg and then roll in the coconut/almond flour mixture. Heat the coconut oil in the pan over medium-high heat and saute the chicken strips until the exterior turns a golden brown and the inside is no longer pink. Remove from heat and place atop a bed of mixed greens. Drizzle with olive oil, lemon juice, and salt and pepper to taste and serve immediately. Serves 4.
 
 
Saturday Workout
  
We will be meeting Saturday, October 16 at 8 AM at the IWU track for another great Saturday workout.  It was beautiful yesterday and the run was fantastic!  Our new member, Susan, came yesterday to the workout and did incredible!  I was so proud of how hard she pushed herself!  Way to go, Susan!  Ladies, thank you for all of the effort that you give me!  It pays off, trust me!
