Saturday Workout - RACE!!
Tex-Mex Summer Squash Casserole
Quote of the Week
Greetings!

Hope that you are having a great weekend!  It turned out to be a beautiful one.  I hope that you all had a chance to get outside and enjoy the weather.

My workouts have been going GREAT!  My diet has been right on.  Hopefully you will start to see the quick changes that we saw as I closed in on the last competition.  Saturday marked the 6 week mark until I will be up on stage again.  I am going to have to work my booty off (literally:) to be ready.  I am getting ready to go to the track this afternoon for my second workout of the day.

The winner of the labor day competition, is Diana S. She is in class every day and is quietly and consistently losing 2-4 pounds at each weigh in. Awesome work Diana!  Keep it up.  If weight loss is your goal, you can do it too.  All is takes is consistency in your diet.  You do not have to be perfect all the time, just about 90% of the time.  Eating mostly fruits and veggies, lean proteins, and healthy fats will get you to your goal.  Cut out the sugars, processed foods, and grains and you will be amazed at your results.  You will feel so much better as well.

There is a "no grain pact" that a few of the members of boot camp have made with each other.  I have included myself in the group by making the commitment to not eat grains at all not only during my contest prep but also when Chris and I are in Las Vegas.  It is that important to me.  It is that important to your health.  It is that important in weight loss.  If anyone else wants to join the "no grain group" there will be a sign up sheet in class tomorrow and Tuesday.  Giving up grains is hard in the beginning, but the results are remarkable.

Tomorrow we will weigh in again and start another competition.  Just under six weeks to my show - six weeks of consistent healthy nutrition, hard working out - and you will be amazed at what happens to your body!  We are so lucky that we get to choose what we put into our bodies.  Make the healthiest choices that you can and watch your body change, your energy soar, and your strength increase.

We have a Jingle Bell Run team created.  Please visit:  http://jbrnormal.kintera.org/faf/search/searchTeamPart.asp?ievent=334611&team=3915439 to join our team.  Even if you have never run a 5 K before, I want you on the team.  Let's all join together and have a big group running this race.  Bring your husbands, boyfriends, fiances, sisters, brothers, moms and dads.  Let's show the jingle bell race who is boss!  The race is November 14th at 1 PM.  Join me - we will hopefully be celebrating another victory for Team Blaudow as I have my third show on November 13th.  Make the commitment to run in the Jingle Bell Run with us.  Let's raise some money for a good cause and do it together.

*****Chris and I are going to be in Las Vegas September 23-26.  I will be having classes at 6 AM MTW of next week and the Friday class will be cancelled.  The 5:15 class will meet M-TH (there will be a substitute teacher on Thursday).  If you come three days a week, please plan on coming three of the four days.  THE FRIDAY (SEPTEMBER 24) CLASS WILL BE CANCELLED.*******

Saturday Workout

The race girls have decided to run another 5 K this Saturday in place of the Saturday workout.  Its proceeds will benefit Autism.  The race starts at 9 AM, Saturday, September 18.  For more information and to sign up:

I will not be participating in this race.  I am getting too close to the competition to sacrifice a workout in the gym for a three mile run.  I will be ready to beat my last time in the Jingle Bell run.  :)

Have fun and go hard!
Greek Stuffed Zucchini Boats Recipe:
Ingredients
4 zucchinis
EVOO
1 lb ground beef at least 95% lean
Minced garlic
Chopped onion
Small package of tomato-basil Feta cheese crumbles
Can of diced tomatoes (or use fresh)
2 eggs
Optional - mozzarella or parmesan cheese, grated
Fresh basil

Instructions:
Preheat the oven to 375 degrees, and set a large pot of water to boil.
Saute the chopped onion and minced garlic in EVOO, add the ground beef, and cook over medium heat to brown.

When the water is boiling, put the zucchini in for about 4 minutes to cook them just a bit. Remove, rinse with cool water so you can handle them, cut in half lengthwise, and scoop out the innards.

Add zucchini innards (chopped) to the beef as it cooks. Season with salt, and pepper.  Mix the beef mixture in a bowl with the feta, tomatoes, and eggs.

Fill the zucchini boats with the beef mixture.  Top with cheese (optional) and fresh basil.  If there is extra filling, put it in a small casserole dish or ramekins to bake separately.

Bake 20-30 minutes.
Quote of the Week

Discipline is the bridge between goals and accomplishment.
       - Jim Rohn

Remember the two types of pain.  The pain of discipline and the pain of regret.  Why are you working out so hard if you are not going to follow it up with a healthy lifestyle?  You can do it.  Figure out what you want and go get it!
T-shirt orders and payment are due this Wednesday, September 15th.  If you emailed me with your order, please double check the sign up sheet to make sure I got the order correct.  Pictures of the T-shirts are in class along with the sign up sheet.  Please make your checks for the T-Shirts payable to Alphia Stephens, and to Emily Blaudow for the tank tops.

Thanks and have a great night!  Love, Emily
