| Greetings!
With all the hype about the competition, time flew by! Seven more days. Four more workouts. One last set of sprints. I am amazed that it went by so fast. I guess what they say is true...time flies when you are having fun. Most of you would not classify training for a competition "fun," but looking back over the past 8 weeks, I realize that I loved training for my competition. I love pushing myself to do more than I have ever done before (having Chris push me...is another story. I cannot wait for him to enter his competition so I can kick his behind!!). To look better than the girl next to me on stage. I sure hope that I have done it.
I am ready to get up on stage and do this. But I am also ready to get back to life. I really miss my training partner. I miss the date that Chris and I have every day at the gym. I am ready to take some of the pressure off and be able to focus on you ladies and not so much on myself.
That does not mean that I am going to go too far off of my diet, though. No, I will not be as strict, but I have come to love all of my veggies, so I will continue to eat 6 or 7 servings of them each day. Once you get into the habit of something, it is hard to break. I am looking forward to adding back in some fruits too! I get to eat banana protein shakes along with you all now! I am so excited!! :) I never would have thought that coming off of this strict of a diet that I would be craving a banana protein shake! After a show, most people would be wanting a blizzard...not me, protein and bananas!
The health bug has gotten to me too! I love drinking from the fountain of youth. I have worked too hard to go back now. Yes, I will eat a few cheats and really relax my standards for a day after the show, but come Monday, you will not see me eating junk. Healthy foods make my body feel so much better! Yes, I will get to eat more of them, than what I have been, but I will not replace any of the veggies in my fridge. They have a permanent home there. My life is 100% dedicated to health and fitness. My life is 100% dedicated to you and helping you reach your goals. Now, the spotlight is on you. Show me what you want your body to look like. Show me how badly you want it. Show me with that food journal.
You can do it. You can make all of your dreams come true if you set your mind to it, don't give up, and let yourself succeed! I love you. Thank you so much for going with me on my journey to this show. Your support and motivation got me through more than one workout, and more than one craving! Thank you so much for your help.
Love, Emily
t-minus 7 days and counting....

The Competition
I know that some of you are going to make the trip to Morton to cheer me on next Saturday night! If you are going to be able to make it, THANK YOU! I really appreciate the support. I am sure I will be a ball of nerves, but I can do it. With you there to cheer, I will feel so proud.
The show starts at 6 PM on Saturday, July 17th. I will have a schedule of events (hopefully) some time this week, so we know better what time I will be on. The competition will take place at the Bertha Frank Performing Arts Center. Bertha is attached to Morton High School. Tickets for the show are $20.
From Bloomington: Take 74 West to Morton exit (102). Turn left coming off of the ramp onto N. Morton Ave. Turn left at Jackson, the second stop light. Go straight through the 4-way stop (you will have to veer to the left slightly, but you will be staying on Jackson). Morton High School will be on your right. Turn into the parking lot. Bertha Frank PAC is around to the left behind the gym. You can drive through the parking lot to park near the entrance.
After the show, if you want to stick around, we will go to dinner to celebrate, hopefully with trophy in hand! :) I have not yet decided where we will eat, but I am sure it will not be the healthiest thing that I have eaten in the past 8 weeks! :) I choose Saturday to use up one of my X's! Be sure to save one of yours as well! |

| The Picnic
Ciarra has taken a huge weight off my shoulders and is planning the details for the Appreciation Picnic. She saved the day when I realized that I did not give myself enough time to get all the plans made and finish my contest prep...thank you Ciarra.
The picnic is scheduled for Sunday, July 25th, 1-3 PM. We will be meeting at McGraw Park. Please contact Ciarra if you need directions...because I have no idea where it is... :)
If you would like to help her plan and get ready for it, please send her an email and offer your services! I really appreciate anything that you can or want to do to help! I am so excited to get together with all of you, meet your families, and be able to actually have you talk to me...since hopefully you won't be so out of breath, or sweaty! :)
There are sign up sheets at the Gym for you to let us (Ciarra) know how many will be attending. Please also let us know what you will be bringing to the picnic. I ask that you bring a healthy dish to share. After you have decided, please email the recipe to Ciarra ( ciarra1028@hotmail.com ). She is going to have recipe cards for all of the healthy dishes ready for you to take so you can make your favorites at home!
Thank you for wanting to come and spend some extra time with me. We don't get enough time to talk during class...and I really don't want you to be able to talk during class...so I am really looking forward to this opportunity to spend the afternoon together. |

The Recipe
Roasted Shrimp with Spaghetti Squash
This is a great way to get more veggies in your family. If you don't tell them that this is not pasta, they will eat it and love it. Just tell them it is a new kind of spaghetti that I told you about! :) If you don't want to turn on your oven, put the squash out on the preheated grill in a grill safe pan, and feel free to grill the shrimp as well. I will be eating this next week, for sure!
Ingredients Serves 4
1 medium spaghetti squash (about 3 pounds), halved lengthwise
Coarse salt and ground pepper
1 pound large shrimp, peeled and deveined
1 tablespoon plus 1 teaspoon extra-virgin olive oil
1 tablespoon fresh lemon juice, plus lemon wedges for serving
2 tablespoons fresh parsley, roughly chopped
Directions 1. Preheat oven to 375 degrees. Season squash with salt and pepper. Place cut side down in a 9-by-13-inch baking dish. Add 3/4 cup water and roast until tender when pierced with a knife, about 45 minutes. Let cool. 2. Meanwhile, on a rimmed baking sheet, toss shrimp with 1 teaspoon oil; season with salt and pepper. Roast until cooked through, 8 to 10 minutes. 3. Scoop out seeds from squash and discard. With a fork, scrape flesh into a large bowl. Add shrimp and any cooking juices, lemon juice, and 1 tablespoon oil; toss to combine. Season with salt and pepper, top with parsley, and serve with lemon wedges.
On a side note: I usually take the seeds out of the spaghetti squash before I cook it. Then after it is cooked, use a fork to scrape out the "spaghetti" from the inside.
