Hope that you are having a great week.  I don't know where the time goes.  It is almost the end of May.  My competition training is going well.  Chris, my love, has gone from training partner to "COACH" so some days are more trying than others.  Just know that I am getting a taste of my own medicine!!  :)  He pushes me just like I push you...so as you are glaring at me during the workout, know that I understand!!  :)  I have a few video clips from some of my workouts so that you can see what I am being put through (I will put them up on the blog (http://myleanbodybootcamp.blogspot.com/) as soon as I figure out how...:). 
 
I know it is worth is...and I want to WIN that competition, so I am going to give it my ALL! 
 
Each of you give me everything that you've got during the workouts, so on the days that I don't feel like it, I think of you, and I am instantly motivated by how hard you work.  Thank you for helping me reach my goals.  Thank you for your hard work.  Thank you for all of the excellent food journals that I have been seeing.  Dieting is hard work and unfortunately we have to make our bodies a little bit uncomfortable to get them to change, I understand what you are going through!  I am doing it too.  My diet has been perfect for the past couple days, it is a tedious process, but it is worth it.
 
Your hard work and sacrifices are worth it too.  You can do it... let me be your motivation throughout the day as you are being mine!

Healthy Fudgesicles  
 
You will be amazed at how delicious these are.  The egg whites give these healthy treats the same texture as a real fudgesicle.  No more skinny cow - eat these fudgescicles instead.  
 
Feel free to experiment with instant coffee - add a teaspoon or two for a mocha fudgesicle.  Follow Stacey's example and grind up a cup of spinach leaves in the blender with it.  You will never know they are in there.  Add some ground flax seed to increase your fiber and Omeag-3 intake.  The possibilities are endless!   
 
1 cup egg whites (we buy the pasturized ones in the carton)
2 scoops chocolate protein powder
 
Blend the ingredients together in a blender.  Pour mixture into popsicle trays and freeze overnight.
 
Makes 4, 4oz popsicles.
 
Nutrition Facts (per popsicle):  101 calories,  1 g. fat, 4 carbs, 19 g protein 
 
Skinny Cow nutrition facts:  100 calories, 1 g. fat, 22 carbs, 4 protein.  It just doesn't make since to eat these.
June Nutrition Class
The June nutrition class will be devoted to eating healthy at restaurants.  We will meet on June 17th at 6 P.M. - mark your calendars.  I will talk about what you can do to eat healthy when you are out to eat.  We will talk Mexican, Chinese, American.  There are tricks to eating healthy even at "unhealthy" restaurants.

Thank you so much to those of you who were able to attend the grocery store tour!!  I had a great time.  I hope that I was able to get you some good information and answer some of your questions about the food that we eat!  Your hard work and dedication is paying off.  The food that you buy greatly affects your body.  If it is in your house, the chance that you will eat it when you are on a diet increases drastically.  That is why the excuse "I buy it for the kids" is not a good one.  Don't feed it to your children either!!!  :)  We want healthy families and what we feed them influences their health as well.  Start those kiddos out right and get them eating their fruits and veggies right along with you!  They won't miss the junk for long!

Don't forget about our competition.  We will weigh in again on Monday, May 31, 2010 - can you believe that it has been two weeks since I announced it!?!?!  So think about what you are doing over the long weekend.  I will be very diligent about sticking to my diet.  Will you?  Don't let a few days ruin your progress and all of your hard work!!  I know that all of the sweat I had pouring out of me while running bleachers today is not worth the chips or cookies at the weekend party!!
