Eat
this on a night that you are in the mood for Mexican, but don't want to ruin your whole week by eating the entire basket of chips. It is super quick and easy!
Add as many veggies to the mix as you want. The salsa and sour cream serve as the dressing, and give the
salad really good flavor! This sure
satisfies my taco craving. Add a few
black beans, if you want to increase the fiber.
Makes
4 salads
Ingredients:
1 tsp. olive oil
1 medium onion,
chopped
1 lb. 93% or leaner
ground beef
1 package Lawry's
Taco Season
1-2 heads romaine
lettuce, chopped
Diced tomatoes or
cherry tomatoes
½ c. shredded sharp
cheddar
½ c. jarred salsa
¼ c. light sour
cream
1 avocado or ½ cup
prepared guacamole (optional)
any other veggies
you like in your tacos - green onions, black olives, peppers - be creative!
Prep:
Heat oil in a large
skillet over medium heat. Add onion and
cook, stirring often, for about 2 minutes.
Add hamburger and cook until cooked through. Add seasoning packet and water according to package
directions. Simmer for a few
minutes. Divide romaine lettuce between
bowls (about 1-2 cups each). Top each
with 2 T. cheese, diced tomatoes, 3-4 oz. taco meat, 2 T. salsa, 2 T. guacamole
or ¼ avocado, diced, and 1 T. sour cream.
Toss everything together and enjoy!
