10 oz Fresh Organic cranberries
20 oz water
Agave or stevia to taste
Blend cranberries and water in a blender or Cuisinart. You want to use organic cranberries because you will not be cooking the cranberries so it will be very difficult to remove all the chemicals and preservatives of conventional cranberries. Use a thin mesh strainer and pour the juice into a glass bowl or directly into a pitcher. I typically use a funnel. Sweeten juice with agave or stevia to your taste. You can also use this as the base to your holiday tonics with club soda, giner ale, or don't ask don't tell family coping tonics.
Fresh Cranberry Relish
Pulp from cranberry juice
Zest and juice of an organic orange or lemon
Agave or stevia to taste
Various spices such as cinnamon, nutmeg, or pumpkin spice to taste
After straining your juice you will be left with this great nutritious pulp. Zest an orange or lemon and mix the juice in with the cranberry. Add your agave or stevia to taste. If you would like to add additional spices some suggestions are cinnamon, nutmeg, or pumpkin spice. The relish could be used as a side, for various meats or as a sandwhich spread. With both of these recipes you have created a very nutritious drink and relish.
Cranberries are a great source of vitamin C and antioxidants. Unfortunately, most of what you would buy is comprised of high fructose corn syrup, aspartame, and other chemicals that greatly diminish nutritional value. The cranberry light is evenmore chemically altered to reduce the calories and carbohydrates.
